Easy Healthy Dessert: Orange Gel n Fresh Fruit

*** Healthy recipe, quick and easy to make in a flash to beat the summer heat - and it's beautiful for the eyes!





From Denny: Want to eat with your eyes along with your taste buds yet want to keep down those calories? This simple dessert is a winner and a refreshing ending to a light summer meal. Serve it in grand style in a martini glass so you get a 360 degree view of this pretty dessert.

It combines the fresh fruit of your choice, what's in season, along with quenching fresh orange juice, gelatin and a little fresh buttermilk.

Fresh fruit choices? Fresh orange segments, strawberries, blueberries, blackberries, banana and kiwi - whatever you and your family enjoy the most. You could wait to garnish with the fruit and make this interactive fun, allowing guests to make their own fruit choices and then help you serve the dessert.

You have the option of placing some orange segments in the gelatin - or serve the fruit on top later - or both. The choices are endless.

What keeps the calories low is this dessert is made from sugar-free gelatin. The dessert is 60 calories before you add the fruit topping. And don't worry about using buttermilk as it is not noticeable while it gives body and creamy flavor to the dessert.



Orange Gel Dessert With Fresh Fruit

From: “Healthy Eating the Louisiana Way” Food Focus booklet, produced by The Advocate newspaper


Makes: 4 (1/2-cup) servings

Ingredients:

1 cup pure orange juice
1 (3-oz.) small box, sugar-free orange gelatin
1 cup buttermilk
Fruit of your choice for topping
Vanilla yogurt or Lite Cool Whip for topping, optional

Directions:

1. Heat orange juice to almost boiling, then add gelatin. Remove from heat and stir until dissolved. Cool to room temperature.

2. Add cold buttermilk. Stir thoroughly and pour into 4 glass cups or glasses.

3. Refrigerate and chill until firm.

4. Before serving, top with a spoonful of your favorite fruit and a small dollop of vanilla yogurt or whipped topping.

Note: A 1/2 cup is 60 calories (without the fruit and yogurt topping).

The Funny Side of Allergy Season - Ahh, Choo!

From Denny: Check out these just wonderful science facts about pollen from Science Daily:


* Under human-induced climate change we expect higher wind speeds and more frequent storms will move pollen and seeds even farther from the source.

* The older a tree gets, the more pollen it produces each year.

* Long-distance dispersal of transgenic pine pollen is a potential problem only if that pollen is viable.

* Until then, the highest pine pollen had ever been found in the atmosphere was 1000 feet

* The odd thing is that pollen germination did not decline as distance increased ... You would expect germination to gradually drop off as pollen floats further away, but that's not the case.

* Pine pollen can travel up to 1800 miles in a short amount of time.


OK, everyone, do you get the idea that the plant world just might be mad at humanity and this is their revenge? As it was I ran across a study of growing hay fever plants in a carbon dioxide rich environment that caused the plants to produce 61% more pollen. Supposedly, we cannot blame the sooty air all on car emissions as apparently plants and trees make up 80% of the pollution.

So, this is what humanity can expect, just in time for the 2012 predictions of the end of the world as we know it: Climate change is causing faster winds and more storms to blow pollen our way from the ends of the earth that we have never experienced. Trees on this planet are arriving in old age so they are having a last fling at reproducing themselves with the ladies so they are sending out Viagra moments at an alarming rate. Pine pollen is like a blood hound; it likes to travel ridiculously long distances and arrive on your doorstep.

Stop That Cold in Its Tracks: Illness Fighting Foods

From Denny: Want to know some great foods as medicine to deal with life's issues like colds, stomach pains and headaches? Check out this easy to eat and enjoy list!

Colds:

* Mushrooms - boost your immune system. Mushrooms also are considered like a leafy green vegetable and help the liver process toxins easier.

* Salmon - contains high amounts of vitamin D and you need vitamin D to ward off colds.

* Sunflower seeds - contain lots of vitamin E

* Curry spice - helps lower stress levels

* Milk - all that calcium eases muscle aches and pains and soothes you psychologically

* Red bell pepper - high in vitamin C and vitamin A, easy low acid source of vitamin C, the vitamin that lowers and soothes our stress

* Pistachios - loaded with vitamin E, great for lowering cholesterol too, lowers blood pressure and is calming

Headaches:

* Red snapper and salmon - high in Omega 3 fatty acids that are anti-inflammatory. To help fight inflammation - the reason for most diseases like heart disease, diabetes, migraines and asthma.

* Quinoa, an ancient grain, anti-inflammatory full of protein and minerals

* Black beans, anti-inflammatory and aids the liver in digesting toxins better than other beans.

* Cayenne pepper - great anti-inflammatory for lung, sinus and intestional issues, fights cancer too.

Stomach Pain:

* Ginger - proven great for nausea

* Fennel - a digestive aid

* Peppermint oil - a digestive aid

* Fiber - digestive

* Yogurt - helps digest food faster and avoid bloating

* Berries - act like yogurt as ultimate digestive aid

From Denny: This post is number 601 for The Social Poets blog, my first! Woo! Hoo! :) Who knew where blogging would take me - and you - this past year?

I'm finally getting back into regular blog writing. I took a couple of weeks off early in January to slow down the daily writing on 12 blogs for a well deserved rest. Just when I was ready to resume writing the Haiti earthquake hit. Then the three week saga started with trying to find my cousin who had been visiting Haiti at the time of the earthquake disaster - to donate her time as a music teacher. After three weeks she was given a cell phone and talked to her mother and sister.

Of course, as usual, worried family is not so good on details, not thinking like a journalist, and I still don't know her exact location. Sounds like she's in some tent city on some soccer field, recovered from vague details of bad bruising and a not described concussion from falling debris as she ran out of the music school where she was giving a concert. Apparently, one of her students died, though again, no details or name given. She has gathered several of her other students with her - again no names or updates on their status - since they are separated from their parents or may not know the status of their parents.

Well, one detail I know for sure is that my cousin Jeanne will do all she can to help the children around her to keep up their attitudes and play some music for everyone to cheer them as well.

I just wanted to take the time to thank all of you, my subscribers and blogging friends, for checking back on all these blogs for updates on Jeanne and new posts too. Some of the blogs have languished for daily posts. The past week I've worked at getting caught up and created this post for a roundup of posts on all the blogs so you can get caught up easily too. Again, thanks so much for showing up to check out each blog as it's much appreciated!

Confessions of A Cajun Traiteuse - Saving Seeds and Making Wine Part II: "As I continue to share inside stories of my journey as a child Cajun traiteuse, I've thought a lot about everything that this entailed, and wrestled with what I was taught to tell others and what don't you tell. As a girl, I remember thinking time and time again -- 'What does all of this have to do with being a faith healer?' as my Grandpere would have me doing tasks, that seemed to have nothing to do with folk remedies and helping people get well.

I also wrestled with myself over, 'If you have knowledge that can help others, why keep it to yourself and only share with one other person (ie. the one you train to replace you)?'

Two key two key alternative medicine practices of his -- haunt and follow me to this day. The first, was the very involved process of seed saving. This is something that people have been doing all over the world for tens of thousands of years out of necessity.

The other passion had to do with making various homemade wines. These practices haunt and follow me, because I lived long enough to know how important knowing how to do both are to being self-sufficient."

From Denny: The generation of the cultural folk faith healer is fading. There was a time when knowledge of herbs as medicine was common throughout America and Europe. Since drug companies moved in and began growing, producing and selling the results of the healers' knowledge much of the knowledge has ceased to be passed down.

As Americans began moving from the farm in the 1950's into city and suburban situations a lot of knowledge has no longer been taught or cultivated. This article is a look into a fading world with an eye to write down what was once orally taught only to small groups or one individual per generation. This is a special treat for someone to be writing on this subject without monetary gain.

Newest Health Care Plan: Food as Medicine - "OK, so what does the minor political rant have to do with food as medicine you ask? Plenty. When jobs are scarce or people are underemployed – like most of America right now with 100,000 each week entering those unhappy ranks – people make really bad food choices.

Because of job and ensuing financial stress they go to sugar, lots of carbohydrates and low quality meats. With stress on the rise during this tough economic time worldwide, wallets and bank accounts depleted, it’s time to think of food as medicine."
