From Denny: The past month I've been busy rounding up what the readers enjoyed throughout the year on all the blogs. It's amazing what people find intriguing - like the crazy humor post about the sloths over at Dennys Funny Quotes. The sloth post has gone past 30,000 views. People just love the cute little guys in the video. It's for a good cause too - a sloth sanctuary in Costa Rica.

Los Angeles Canters Bakery Recipe: Chocolate Cheesecake

Try this well-loved easy one layer sheet cheesecake.



From Denny:  Talk about simple, basic and a real taste winner! Try your hand at this easy version of cheesecake before you try to tackle the tall ones that can crack on you in the oven. You have to let the really big boys cool several hours, even overnight, in the oven so the temperature changes slowly to avoid that massive earthquake cracking. Of course, you can always cover it with a mountain of fruit or icing when all else fails. Like my mother-in-law used to say, "Don't worry. It will all be eaten!"

This little gem of a cheesecake is prettiest with the mini-chocolate chips. If all you have are the larger ones, try chopping them. If not, "soldier on." I wonder how the butterscotch ones would taste? Or the chocolate-mint chips? Or the white chocolate chips? Choices, choices. Baking is too much fun! :)


Canter's Chocolate Cheesecake

From: "Los Angeles Classic Desserts" by Grace Bauer

Total time: 1 hour, 15 minutes, plus cooling and overnight chilling times

Servings: 8

Note: Adapted from Grace Bauer's "Los Angeles Classic Desserts." The recipe works best with mini chocolate chips, though standard-size chocolate chips can be substituted.

Ingredients:

Graham cracker crust:

1 1/2 cups graham cracker crumbs

1/4 cup sugar

6 tablespoons (3/4 stick) butter, at room temperature

Directions:

In a large bowl, combine the graham cracker crumbs and sugar. Stir in the butter until fully incorporated. Firmly press the mixture into the bottom of a greased 8-inch square baking dish.


Cheesecake filling and final assembly:

Ingredients:

12 ounces (1 1/2 boxes) cream cheese

1/2 cup sugar

1/2 teaspoon vanilla extract

1 teaspoon lemon zest, from about 1/2 lemon

2 eggs

1 cup sour cream (about 8 ounces)

Pressed graham cracker crust in pan

1 cup mini chocolate chips


Directions:

1. Heat the oven to 300 degrees.

2. In a large mixing bowl, beat the cream cheese until it is soft and fluffy. Beat in the sugar, vanilla and lemon zest until fully combined. Beat in the eggs, one at a time, then fold in the sour cream until blended. This makes about 3 1/2 cups filling.

3. Pour the mixture over the pressed graham cracker crust in the dish, and sprinkle the chocolate chips over the top. Bake the cheesecake until it is set and jiggles slightly when tapped (as with gelatin), about 45 to 55 minutes. Turn off the oven, leaving the cheesecake in the oven to cool. Remove the cooled cake and refrigerate overnight before serving.

Each serving: 596 calories; 9 grams protein; 48 grams carbohydrates; 2 grams fiber; 43 grams fat; 24 grams saturated fat; 200 mg. cholesterol; 39 grams sugar; 309 mg. sodium.

From Cafe del Rey: Mediterranean Pizza

From a famous restaurant - Pizza dough, tomato sauce and basil pesto - 3 recipes.




From Denny: Ever tried making your own pizza dough? It's easy and fun and the flavor is awesome compared to most commercial pizzas. Besides, you can spice it up however you like. At our house we always drizzle some extra virgin olive oil or clarified butter on top along with garlic powder and specialty chili powders from New Mexico.

This restaurant pizza is famous for its light crust and bright sauce. This recipe makes two pies to enjoy. They use the herb marjoram like we do. If you haven't tried this delightfully fragrant herb you will love it. It tastes sweet and combines well with tomato to help balance the sour taste without adding sugar to the sauce.

Denver Rackhouse Pub: Beer Baked Mac N Cheese

Several creamy cheeses and wonderful beer combine for a slice of comfort food heaven.




From Denny:  Check it out! Yet another stellar mac 'n' cheese recipe to enjoy. Does Life get any better? The perfect weekend food, the perfect crowd pleaser, the perfect recipe for the cold weather and all this crazy snow we have been finding all across the nation this winter.  What a pleasant way to warm up! :)

This recipe is real magic. Snuggled warm inside this dish are no less than five kinds of wonderful cheeses. The rich base gets a lift from amber ale. It bakes with a blanket of light panko crumbs for some crunch. Parmesan cheese spreads out on top too to give a rich, golden perfection.

Beer-Baked Mac 'N' Cheese

From: Rackhouse Pub in Denver, Colorado

Total time: 1 1/2 hours

Servings: 12 to 16


Ingredients:

1 cup (2 sticks) butter

1/2 cup flour

1/2 cup amber beer

2 cups half and half

1/2 pound Brie

16 ounces (2 packages) cream cheese

1 1/2 cups crumbled Gorgonzola cheese

2 1/2 cups shredded cheddar cheese

1 1/2 cups grated Parmesan cheese, divided

1 (16-ounce) box penne pasta, cooked and drained

Salt and pepper

1/2 cup panko or bread crumbs


Directions:

1. Heat the oven to 350 degrees.

2. In a medium, heavy-bottom pot, melt the butter over medium heat. Whisk in the flour to form a light roux. Slowly whisk in the beer and half and half.

3. Add the Brie and cream cheese to the sauce, stirring until the cheeses are melted and incorporated. Stir in the Gorgonzola, cheddar and 1 cup Parmesan cheese.

4. Stir in the pasta, taste and adjust the seasonings as desired with salt and pepper (some of the cheese will be salty and the mixture may need only a little salt, if any).

5. Pour the mixture into a 13-by-9-inch baking dish. Top the mixture by sprinkling over the remaining Parmesan cheese and panko crumbs. Place the dish in the oven and bake until the sauce is bubbly and the toppings are crisp and golden, about 1 hour.

6. Cool slightly before serving.

Each serving: 566 calories; 20 grams protein; 29 grams carbohydrates; 1 gram fiber; 41 grams fat; 25 grams saturated fat; 123 mg. cholesterol; 2 grams sugar; 611 mg. sodium.
