From Denny: Between Colbert and Stewart, well, let's just say they have BP's shenanigans covered. Nothing gets past them!

In my ongoing effort to provide stress relief when the national conversation is so depressing - because of the BP Gulf Coast oil spill, a fragile economy and politicians who continually refuse to do right by the American people - we all need to keep laughing our way through these times until they get better. Trust that times will get better and they will. Until then, while we are in transition, we must develop coping skills for managing daily stress like making sure we are laughing often.

This is one of those times when it is true that "the pen is mightier than the sword" for the right kind of writing can bring relief to thousands in one moment over the internet. Pretty cool when you think about it. How many people can accomplish so much out of thin air? :)

Cake Tuesday: Red, White and Blue Independence Day Cake

*** Bake an unusual and patriotic attention-getting cake to wow your friends and family this Fourth of July!

From Denny: We eat with our eyes before we eat with our taste buds. This pretty patriotic cake sure gets your attention! Red, white and blue layers of cake are slathered with Marshmallow Buttercream Frosting and decorated with summer fresh blueberries and strawberries.

For a beginner baker - or if you are pressed for time and don't want to fuss with a difficult icing - this easy cake is for you. The cake layers are made from scratch and use buttermilk for great taste and texture, much like using sour cream in a cake or muffin.

When you finish icing the cake and have to wait a few hours before serving, hold off on the fruit garnish. With cakes like this I like to garnish with fruit as I serve the slices. That way you don't have to be concerned about the fruit starting to break down its juices and start to run watery all over your perfect cake and icing, sliding off like some summer park water slide! :)

Independence Day Cake


From: White Lily Flour and The J.M. Smucker Co.

Makes: 12 servings

Ingredients:

Nonstick cooking spray
3-1/2 cups bleached all-purpose flour
2 cups sugar
1-1/2 tsps. baking powder
1-1/2 tsps. salt
1 tsp. baking soda
1-1/4 cups buttermilk
1-1/4 cups all-vegetable shortening OR 1ΓΈ sticks all-vegetable shortening sticks
5 large egg whites
1 tsp. vanilla extract
1 tsp. almond extract
1 tbl. red food coloring
1 tbl. blue food coloring

Garnish:

Fresh blueberries and strawberries, optional

Marshmallow Buttercream Frosting:

2 cups butter, softened
2-1/2 cups powdered sugar
1 tsp. almond extract
1 (13-oz.) jar marshmallow cream

Directions:

1. Heat oven to 350 degrees F. Coat three 8-inch round pans with nonstick cooking spray. Line bottom of pans with parchment paper, cut to fit. Coat paper with nonstick cooking spray.

2. Whisk together flour, sugar, baking powder, salt and baking soda in large bowl. Add buttermilk and shortening. Beat with electric mixer at medium speed for 2 minutes. Add egg whites, vanilla and almond extracts. Beat an additional 2 minutes, scraping sides of bowl as needed.

3. Pour ont-third (about 2 cups) of batter into prepared pan. Divide remaining batter into 2 medium bowls. Stir in food coloring to make one red and one blue batter. Pour batter into remaining pans. Tap pans on counter several times to remove air bubbles.

4. Bake 25 to 30 minutes, or until toothpick inserted near center comes out clean. Cool on wire rack 10 minutes before removing from pan. Remove cake and cool completely on wire rack.

5. For frosting, beat butter in a large bowl with electric mixer at medium speed until creamy. Gradually beat in sugar, 1/2 cup at a time, until fluffy. Beat in almond extract. Stir in marshmallow cream until well blended.

6. Place blue cake layer on cake plate and generously frost top. Stack white layer and generously frost top. Add red layer, frosting top and sides of entire cake. Garnish with fresh blueberries and strawberries, if desired.

Cake Tuesday: Red, White and Blueberry Shortcakes

*** Patriotic AND tasty fresh berry shortcake dessert good any time in the summer heat!




From Denny: What a beautiful dessert! It's tasty, bursting with fresh berries and so easy to make. Shortcake is just a huge sweetened biscuit. Make sure to read through to the end of the recipe before you begin making this dessert as it will give you a great tip for making the perfect shortcake biscuit.

Shortcake is easy to portion for single servings so you can give your guests the amounts of whipped cream or berries they prefer. These shortcakes are light and fluffy and sure to be a bit hit with family and friends. Fresh berries, whipped cream and that perfect bite of cake will explode a fireworks of taste in your mouth! :)

Red, White and Blueberry Shortcakes


From: Driscoll’s

Serves: 8

Ingredients:

2 cups all-purpose flour
1/3 cup granulated sugar
1 tbl. grated lemon zest
2 tsps. baking powder
1/2 tsp. baking soda
6 tbls. cold butter, cut into small pieces
1/2 cup buttermilk
4 tsps. coarse sugar crystals
1 (16-oz.) pkg. strawberries, hulled, sliced
1/2 cup powdered sugar, divided
1 tbl. lemon juice
1 cup cold whipping cream
1 (6-oz.) pkg. blackberries
1 (6-oz.) pkg. blueberries
1 (6-oz.) pkg. raspberries


Directions:

Preheat oven to 400 degrees. Combine flour, sugar, lemon zest, baking powder and baking soda in a large bowl.

2. Cut in butter, using a pastry blender or two knives until mixture resembles coarse crumbs.

3. Stir in buttermilk just until dry ingredients are moistened.

4. Place dough on a lightly floured surface. Knead gently 4 times. Pat or roll dough on lightly floured surface to 1/2-inch thickness.

5. Cut out 8 stars, using a 3-inch floured star cookie cutter. Place on ungreased baking sheet. Brush tops with water and sprinkle each with 1/2 teaspoon sugar crystals.

6. Bake 12 minutes or until golden brown. Cool on wire rack.

To make strawberry sauce: In a blender or food processor, puree 1 cup strawberries, 1/4 cup powdered sugar and lemon juice until smooth.

To make whipped cream: Beat with an electric mixer whipping cream and remaining 1/4 cup powdered sugar until thickened and soft peaks form.

To assemble: Toss remaining sliced strawberries, blackberries, blueberries and raspberries until blended in a large bowl. Using a serrated knife, cut shortcakes in half horizontally. Place the bottom of each shortcake on each of 8 dessert plates.

Drizzle each shortcake with 1 tablespoon strawberry sauce. Top each with a dollop of whipped cream and about 1/2 cup berries. Place top of shortcake over berries. Serve with remaining strawberry sauce.


Nutritional analysis per serving: 408 calories, 20.3 grams fat, 64.82 milligrams cholesterol, 601.12 milligrams sodium and 3.56 grams fiber.

To lighten: Instead of using whipped cream, dollop with frozen thawed fat-free prepared whipped topping.

Helpful tip: Cutting cold butter into the flour makes little crumbs of fat that produce light, flaky shortcakes. A light stirring and kneading of the dough makes the flakiest shortcakes.

Cake Tuesday: Shenandoah Apple Cake

From Denny: Apple cake is one of those first cakes a beginner baker learns to make because it is so tasty for breakfast, a weekend brunch or an afternoon snack with a cup of coffee or tea. At our house we like fruit desserts like fruit pies and fruit cakes.

Also, on the health side, when you eat fruit in a sugary dessert the fruit helps minimize the effects of sugar causing that roller coaster ride for the blood sugar that can leave you depleted of energy a few hours later. So, if you like sweets - but have some issues breaking away from too much sugar in your diet - this fruit in a sugary dessert helps you work your way out of it. If you don't have any issues with too much sugar in your diet, just enjoy! :)

When I make apple cake in the summer I like to add 1/2 teaspoon freshly ground nutmeg to the cinnamon. When I make this cake in the fall I add 1/4 teaspoon of ground cloves to the cinnamon. Nutmeg is lighter and fresher to the senses just perfect for the spring and summer. Cloves as a spice is mysterious and warm in sensation.

It is an extremely strong spice so don't add more as the spice can take over the flavor of a dish. Using cloves as a background hint does wonders for more than baked goods. I use it in marinara and spaghetti sauces and even when I make oatmeal for breakfast. Here in Louisiana we use ground cloves in our seafood boil seasonings too. There is more to the clove spice than just studded in the fat to bake a ham! It's sweetness is versatile when used with a very light hand.

In my ongoing effort to promote small business over Big Business I'm featuring this Virgina bed and breakfast inn today. Considering that the Fourth of July is this weekend, what could be more patriotic than to remember the earliest history of America? This inn dates back to 1740! Shenandoah Apple Cake

Ingredients:

5 apples, pared, cored, and thinly sliced
5 tbsp. granulated sugar
2 tbsp. cinnamon
4 eggs
2 c.sugar
3 c. flour
1 c. oil
3 tsp. baking powder
2 + 1/2 tsp. vanilla
Juice of one orange (1/4 c.)

Directions:

Mix first three ingredients together and set aside.

Beat eggs with sugar, add oil, flour, baking powder, vanilla, and orange juice.
Beginning with batter, alternate layers in a greased and floured ring pan, ending with batter.

Save some apples to decorate the top. Bake at 350 degrees for 1 hr. and 10 min. Cool on a wire rack and remove from pan. Sprinkle with confectioners sugar before serving, if desired.

Muffin Monday: Egg, Ricotta Cheese, Sun-Dried Tomato Breakfast Muffins

From Denny: The versatility of the simple egg is to be celebrated! How this photographer chose to display this egg is amusing. What's better is this recipe is basically a small baked omelet and so easy to do. It's also a good recipe for diabetics or those who avoid gluten in their diet.

Exploring all these bed and breakfast muffin recipes has been a lot of fun. Discovering new inns in different parts of the country made me think how promoting small business is a way to help the economy! Muffin Monday was born to help celebrate muffin recipes and travel across America and Canada.

Egg Muffins

Ingredients:

8-10 eggs
Splash of Half and Half
Lots of spinach that is drained well
SautΓ©ed onions
2 pinches of garlic garnish
2 spoons of ricotta cheese
Sun dried tomatoes
Parmesan cheese
Pinch of nutmeg

Directions:

Mix everything but the eggs together and fill muffin cups to the top with mix.
Pour whipped eggs into muffins.

Bake 30 - 40 minutes at 350 degrees F. till they rise and set.

Muffin Monday: Chocolate Cheesecake Muffins

From Denny: This muffin is a star any time of day. It has sweet goodness, chocolate awesome and the protein of cheese. Color me into the breakfast corner with this winner! :) And its versatile: For this muffin you can use ricotta cheese or small curd cottage cheese if the ricotta is not easily available.

It's been fun to explore the bed and breakfast inns behind these recipes. Each one is a surprise from the last one visited. I've been thinking about how to help the economy with blogging about these inns. Muffin Monday is quickly becoming a brain child for stimulating and growing our economy. By promoting these bed and breakfast inns, who are small businesses, we can help our economy because it keeps jobs here. Small business is the engine upon which the economy has traditionally run. Keep them strong, rejecting the big businesses whenever possible, and we can restore our healthy economy.

Just because the politicians have sold out to Big Business does not mean the regular American has to follow their wrong lead. So, next time you are traveling for business or pleasure, take a little time and find a bed and breakfast inn instead of the usual hotel. The prices are comparable, many times they are a better buy. And it certainly is a more sociable and welcoming atmosphere than the usual impersonal hotels. Try a little social consciousness along with a great recipe! :)

Chocolate Cheesecake Muffins

From: School House Bed & Breakfast Inn

Yield: approximately 18 muffins

Ingredients:

2 1/3 cups flour
1 cup sugar
1 cup semisweet chocolate chips
1/2 cup cocoa
2 teaspoons baking powder
1 teaspoon salt
1 cup ricotta cheese (or small curd cottage cheese)
2 large eggs, lightly beaten
1 1/3 cups milk
1 teaspoon vanilla
1 cup canola oil
Cooking Spray


Directions:

Preheat oven to 350 degrees. Spray muffin tins with cooking spray. In a large bowl, mix flour, sugar, chips, cocoa, baking powder and salt.

In a medium bowl mix cheese with eggs, one at a time, beating well after each addition. Whisk in milk and vanilla until blended. Fold cheese mixture and oil into flour mixture until just blended. Spoon approximately 1 cup batter into each muffin cup.

Bake 25 minutes or until wooden pick inserted in center comes out clean. Remove from pans immediately and cool on a wire rack. These are delicious and moist, like cheesecake.

From Denny: As a blogger I've started up this Muffin Monday recipe segment to help local economies all across the nation. How? By promoting the small businesses of bed and breakfast inns in America and Canada. Think about it. The next time you travel for business or pleasure be sure to book a bed and breakfast instead of a Big Business hotel chain. The prices are comparable and sometimes less. No one is paying me to write these posts - not do I own any interest in a "b and b" but hey, if you want to step up and donate feel free! :)

Seriously though, I just thought what a great idea if I could promote small businesses over Big Business. With small businesses the jobs stay here in our country instead of getting shipped overseas for cheaper labor costs and bigger profit. Let's support our local small businesses. By doing so we are supporting the 80 percent that drives our economy. Did you realize that most of the people in America work for small business? Big Business has driven so many smaller businesses out of business like small pharmacies, grocery and hardware stores.

It's been an enjoyable romp through the fields of the internet to locate these muffin recipes. Just when I found one bed and breakfast to be an interesting surprise then another one is discovered to be just as unique. Today's bed and breakfast inn promotes a special package rarely found at a hotel: a murder mystery package deal where you can partake in a weekend of amateur sleuthing fun. How unique is that?





From the website: We are an old-fashioned Bed & Breakfast promoting hospitality as our specialty. Located on a barrier island 8 miles long and approximately 1 mile wide where the sea air and ocean sounds are prevalent.

Designated by the Historic Commission as an Ocean City seashore cottage, our B&B has five Victorian rooms with the modern convenience of queen size beds, one with twin beds, and air conditioners in all guest rooms. Each bed chamber is uniquely decorated and named for a special butterfly. Quilts adorn the bedsteads while lace curtain sway with the breeze at the windows. Sour Cream Coffee Muffins

Makes: 12 servings

Ingredients:

Filling:

1/4 cup brown sugar
1/4 cup finely chopped walnuts
1/2 tsp ground cinnamon

Mix together.

Muffins:

1/2 cup butter
1/2 cup sugar
2 eggs
1 cup sour cream
1 tsp vanilla
2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt


Directions: Mix butter, sugar and eggs. Add sour cream and vanilla. Add dry ingredients. Spoon 1 Tbsp of mix into prepared muffin pan. Top with 1 tsp filling and then 1 Tbsp batter. Sprinkle remaining filling on top of each muffin. Bake at 375° for 25 minutes. Remove from pan and cool.

From Denny: Come check out the best of this week's political cartoons, lampooning politicians, Life and sports. Instead of paging through 50 websites pages to look at one cartoon at a time, I've embedded a dozen or more per post to enjoy easily. Can you tell I find it annoying to load page after page just to see all the latest cartoons? :)

These were only a few world soccer cup cartoons available for embedding. To see more just click on the link under the cartoons to take you to the cartoonists' sites. It seems like every night on the TV news we would hear those vuvuzela horns making their joyful noise while they blew out everyone's eardrums. Cartoonists had a lot of fun with that cultural icon.

Congrats go the USA soccer team as they made us proud. It was an amazing run with upset after upset. We got some bad referee calls when it was obvious the gambling syndicate phoned in how they wanted the game to be called. America's team still went forward to win after win. This week it was Ghana's turn to win against America and knock us out of the race for the world cup.

America's team went into this competition with little hope and fewer expectations. As far as Americans are concerned our team was a Cinderella team. They succeeded in winning our hearts and ignited a huge interest in this country for the game of soccer. From my corner of the world, I'd say your game was well played, guys!

Cake Tuesday: Coffee Toffee Fudge Cake, Tunnel of Fudge Cake

From Denny: Is this not a clever way to photograph your favorite slice of chocolate cake or what? It sure amused me so I just had to share it with you so you can get a grin too. I wasn't successful in finding a photo of this cake with coffee, toffee and fudge in it. These bed and breakfasts have yet to post photos to go with their recipes. People eat with their eyes first and if they post these delicious photos people will be booking rooms in speedy time!

Of course, the added bonus of searching a database is to find something else interesting that catches my eye. There it was, smiling back at me, this old recipe that pulled up the fondest memories of living in Atlanta, Georgia, when I used to bake these fun tunnel cakes. My other fav tunnel cake was the chocolate cake with a tunnel of cream coconut. That was a real OMG moment of explosion of perfect flavors.

For all my sugar-holic friends and blog fans out there in online land, these blow-out-the-calories sweet chocolate cakes are for you! When you bake one of these darlings, save a slice of chocolate goodness for me, done with great reverence - of course. And, then, think better of it to share - and instead woof it down in proper chocolate etiquette homage. :)

Coffee Toffee Fudge Cake


Ingredients:

7 ounces semisweet chocolate, coarsely chopped (200 g)
1/2 cup butter, cut in pieces (125 mL)
1/4 cup coffee liqueur (50 mL)
1 tablespoon instant coffee granules (15 mL)
1/2 cup packed brown sugar (125 mL)
4 eggs, separated
2/3 cup all-purpose flour (150 mL)
1/4 teaspoon each salt and cream of tartar (1 mL)
1/4 cup granulated sugar (50 mL)
4 bars (each 39 g) milk chocolate-covered toffee, finely chopped

Chocolate Glaze

1/4 cup whipping cream (50 mL)
2 tablespoons coffee liqueur (25 mL)
2 teaspoons instant coffee granules (10 mL)
5 ounces semisweet chocolate, coarsely chopped (150 g)

Directions:

In saucepan, heat semisweet chocolate, butter, liqueur and coffee granules over medium-low heat, stirring constantly, until smooth. Remove from heat; whisk in brown sugar until dissolved. Whisk in egg yolks, one at a time, whisking well after each addition. Whisk in flour in three additions; let cool for 5 minutes.

In bowl and using electric mixer, beat together egg whites, salt and cream of tartar until soft peaks form; gradually beat in granulated sugar until stiff peaks form. Whisk one-third into chocolate batter; fold in remaining egg whites. Gently fold in half of the chopped chocolate bars.

Pour into well-greased 8-inch (750 mL) round cake pan. Run knife through batter to remove air bubbles. Bake in 350°F (180°C) oven for 45 minutes or until top is firm to the touch and crust has formed. Let cool on rack for 10 minutes. Remove from pan and let cool completely.

Chocolate Glaze: In small saucepan, bring cream, liqueur and coffee granules to boil over medium-high heat. Immediately stir in chocolate; remove from heat and whisk until smooth. Let cool to room temperature. Pour over cake, letting some drip down sides. Garnish with remaining chopped chocolate bar. Refrigerate for at least 1 hour or until glaze is set. (Cake can be covered and refrigerated for up to 5 days or frozen for up to 1 week.)

Serves: 16
Prep Time: 35 min (Ready in 4 hr 30 min )
From: Pillsbury

Cake:

1 3/4 cups or 4.2dl sugar
3,5 sticks or 400g margarine or butter, softened
6 eggs
2 cups or 4.75dl powdered sugar
2 1/4 cups or 5.5dl all-purpose flour
3/4 cup or 1.75dl unsweetened cocoa
2 cups or 4.75dl chopped walnuts (NOT optional)
Glaze:
3/4 cup or 1.75dl powdered sugar
1/4 cup or 3/4dl unsweetened cocoa
4 to 6 teaspoons milk


Directions:

Heat oven to 350F/190C. Grease and flour 12-cup/28dl Bundt® pan or 10-inch/25cm tube pan. In large bowl, combine sugar and margarine; beat until light and fluffy. Add eggs 1 at a time, beating well after each addition. Gradually add 2 cups powdered sugar; blend well. By hand, stir in flour and remaining cake ingredients until well blended. Spoon batter into greased and floured pan; spread evenly.

Bake at 350F/190C. for 45 to 50 minutes or until top is set and edges are beginning to pull away from sides of pan. (Since this cake has a soft filling, an ordinary doneness test cannot be used. Accurate oven temperature and baking times are essential.) Cool upright in pan on wire rack 1 1/2 hours. Invert onto serving plate; cool at least 2 hours.

In small bowl, combine all glaze ingredients, adding enough milk for desired drizzling consistency. Spoon over top of cake, allowing some to run down sides. Store tightly covered.

Cake Tuesday: Fresh Peach Coffee Cake

From Denny: One of my fondest memories of living in Atlanta, Georgia, was when the Georgia peaches came into season. There was a frenzy across the city to gather up all the ripest peaches for steaming hot peach cobbler smothered with a side of perfect vanilla ice cream and then bake peach coffee cakes redolent with fragrant cinnamon to pair with that early morning cup of coffee for the next day. Then we would turn to making peach pies, unbaked and thrown into the freezer for those days in the fall when we were craving that fresh peach taste.

And, after we had our fill of the freshest juiciest ripe peaches - for about a week as we stuffed ourselves silly - we turned to canning them, yes, city girls canning peaches like we lived on a farm. A Georgia peach is not to be missed. Neither are the Vidalia onions when they come into season in June, though Texas is giving them a good run for their money on delivering sweet white mild onions to the market.

This recipe for this peach coffee cake comes from a bed and breakfast inn located in British Columbia on the west coast of Canada. What's been fun about researching recipes from bed and breakfasts across America and Canada is to go to their websites and see what they offer the weary traveler. What I found unique about this inn is that there is a vineyard as part of the view!

Fresh Peach Coffee Cake


Ingredients:

1/2 c butter
1 1/2 c packed brown sugar
1 egg
2 c flour
1 tsp baking soda
1 c buttermilk
4 peaches peeled and diced
1 tsp cinnamon
cinnamon sugar mix for topping

Directions:

Cream butter with brown sugar add slightly beaten egg. Add flour and baking soda alternately with buttermilk beating smooth after each addition. Gently blend in peaches. Pour batter into 9-inch x 13-inch dish, sprinkle with cinnamon sugar mix.
Bake at 350 for 30-35 minutes.

Muffin Monday: Banana Praline Muffins, White Chocolate Banana Bread

From Denny: In my search to see what's baking at the bed and breakfast inns across America and Canada I found this sweet comfort food for breakfast. This recipe comes from a rustic peaceful Texas inn.

While I live next door in Louisiana where we grow the most awesome pecans, they grow them in Texas too. Both states love the praline for everything from muffins to cakes to bread pudding and sweet potato casserole toppings.

Searching for non-copyrighted photos, this photographer posted this little darling banana bread recipe with the sweet goodness of added white chocolate chips. You can try other variations besides chocolate chips if you like. Tips for baking well and suggestions of ingredients follows the recipe.


Banana Praline Muffins

From Las Brisas Farm: Tired of work and stresses of the city? Want to get away and just relax? If so, Las Brisas Farm offers a much needed respite. Las Brisas Farm is located in the heart of Czech-German country and is one mile south from historic Fayetteville where shops and dining reflect yesterday's past. The cottages are set on forty rolling acres where one can appreciate spectacular sunrises and sunsets, and star gaze clear, vast skies. One guest described the setting as eye candy for the soul!


Banana Praline Muffins


Yield: 12 muffins


Ingredients:

3 bananas, ripe - mashed
1 egg
1/2 C. sugar
1/4 C. oil
1 1/4 C. flour
2 t. baking powder
1/4 t. salt

Praline:

3 T. brown sugar
1 T. sour cream
1/2 C. chopped pecans

Directions:

Preheat oven to 400 degrees.

Mix brown sugar and sour cream, add pecans.

Mash bananas; add egg, sugar and oil. Beat well. Add flour, baking powder and salt and mix until just moistened.

Grease muffin tins, and put equal amount of batter in each. Top each with equal amount of praline mix in center of muffin.

Bake for 15 minutes or until golden brown.






White Chocolate Banana Bread by Divine Domesticity @ flickr



White Chocolate Banana Bread

Makes: one loaf

Ingredients:

3 very ripe bananas
2 tbsp soft butter
1 cup sugar
1 + 1/2 cups flour
1 tsp baking soda
1 cup white chocolate chips and /or coarsely chopped nuts – pecans or walnuts work well (optional)

Directions:

1.Preheat oven to 375°/190°C

2.Mash bananas in a bowl and add rest of the ingredients. Stir just until blended. It seems as if there is not enough liquid but don’t be fooled. The very ripe bananas add all the moisture needed. Mixing the ingredients together with a fork for 2-3 minutes is all you need to create the batter.

3.Pour into greased 9"x5" loaf pan and bake for 45 minutes or until toothpick comes out dry (unless of course you hit a chocolate chip).

4.Cool for 10 minutes on a cake rack before removing from pan.

5.To bake muffins, prepare the batter as above and bake for 20-25 minutes at 400°F/200°C, in center of oven


Tips & Variations

* This is a great breakfast or mid day snack.
* Instead of chocolate chips (or with them, if you prefer) try:
chopped walnuts or pecans
dried cranberries or cherries
* Just make sure these ingredients add up to one cup. More than that will lose the bread/cake texture.
