A Truth Journal: GOP AND Hillary 2016: Get Serious Or Step Aside, Middle Class Is Fed Up:

From Denny:  Voters for the Democrats, and Republicans alike, are looking all around for a political leader who will, well, lead.  Fourteen years of unadulterated insensitivity and outright political inaction geared toward the majority of the country have all combined to create a ground swell of bitter resentment and grousing that hasn't been seen in decades in this country against both political parties, especially the Republicans.

The Middle Class is fed up with insincere speeches on economic progress, the drumbeat to go to war with ground troops yet again in the Middle East and lame political platitudes on every domestic issue. The Middle Class is disgusted and angry with Wall Street hand holding.  Voters of both political parties are angry with the gentle wrist slapping of cheap fines for business crimes instead of jail time.  Most of all The Middle Class is furious at the overt Good Ol' Boy Winks of government collusion that continues to create an environment of a stagnant U. S. economy and the constant evaporation of well paying jobs in favor of feeding The Beast of Greedy Corporate Profits while starving the people...

A Truth Journal: Laugh: Jon Stewart Tells It Like It Is About VP Debate: From Denny:  Junkyard dog VP Joe Biden smacked down his snarky Republican opponent, Paul Ryan, in the first few nano seconds of the debate.

Then Biden picked up the dazed talking parrot and slammed him against the barn door for lying every time he opened his mouth with phony statistics and fantasy GOP sponsored "studies."  Debate done; Biden won hands down.  We were all cheering at our house as this was the best TV we had seen in years.

Just check out all the funny news clips Jon Stewart collected from the sore loser side, the Republicans.  These three video clips are hilarious; the truth revealed in fast time.  The best is how Stewart took my fellow journalists to task for some really childish reporting, something I've fussed about for years.

Muffin Monday: Egg, Ricotta Cheese, Sun-Dried Tomato Breakfast Muffins

From Denny: The versatility of the simple egg is to be celebrated! How this photographer chose to display this egg is amusing. What's better is this recipe is basically a small baked omelet and so easy to do. It's also a good recipe for diabetics or those who avoid gluten in their diet.

Exploring all these bed and breakfast muffin recipes has been a lot of fun. Discovering new inns in different parts of the country made me think how promoting small business is a way to help the economy! Muffin Monday was born to help celebrate muffin recipes and travel across America and Canada.

Egg Muffins

From: Adobe Hacienda Bed & Breakfast
Sedona, Arizona

Ingredients:

8-10 eggs
Splash of Half and Half
Lots of spinach that is drained well
Sautéed onions
2 pinches of garlic garnish
2 spoons of ricotta cheese
Sun dried tomatoes
Parmesan cheese
Pinch of nutmeg

Directions:

Mix everything but the eggs together and fill muffin cups to the top with mix.
Pour whipped eggs into muffins.

Bake 30 - 40 minutes at 350 degrees F. till they rise and set.

From Denny: This muffin is a star any time of day. It has sweet goodness, chocolate awesome and the protein of cheese. Color me into the breakfast corner with this winner! :) And its versatile: For this muffin you can use ricotta cheese or small curd cottage cheese if the ricotta is not easily available.

It's been fun to explore the bed and breakfast inns behind these recipes. Each one is a surprise from the last one visited. I've been thinking about how to help the economy with blogging about these inns. Muffin Monday is quickly becoming a brain child for stimulating and growing our economy. By promoting these bed and breakfast inns, who are small businesses, we can help our economy because it keeps jobs here. Small business is the engine upon which the economy has traditionally run. Keep them strong, rejecting the big businesses whenever possible, and we can restore our healthy economy.

Just because the politicians have sold out to Big Business does not mean the regular American has to follow their wrong lead. So, next time you are traveling for business or pleasure, take a little time and find a bed and breakfast inn instead of the usual hotel. The prices are comparable, many times they are a better buy. And it certainly is a more sociable and welcoming atmosphere than the usual impersonal hotels. Try a little social consciousness along with a great recipe! :)

Chocolate Cheesecake Muffins

From: School House Bed & Breakfast Inn

Yield: approximately 18 muffins

Ingredients:

2 1/3 cups flour
1 cup sugar
1 cup semisweet chocolate chips
1/2 cup cocoa
2 teaspoons baking powder
1 teaspoon salt
1 cup ricotta cheese (or small curd cottage cheese)
2 large eggs, lightly beaten
1 1/3 cups milk
1 teaspoon vanilla
1 cup canola oil
Cooking Spray


Directions:

Preheat oven to 350 degrees. Spray muffin tins with cooking spray. In a large bowl, mix flour, sugar, chips, cocoa, baking powder and salt.

In a medium bowl mix cheese with eggs, one at a time, beating well after each addition. Whisk in milk and vanilla until blended. Fold cheese mixture and oil into flour mixture until just blended. Spoon approximately 1 cup batter into each muffin cup.

Bake 25 minutes or until wooden pick inserted in center comes out clean. Remove from pans immediately and cool on a wire rack. These are delicious and moist, like cheesecake.

From Denny: As a blogger I've started up this Muffin Monday recipe segment to help local economies all across the nation. How? By promoting the small businesses of bed and breakfast inns in America and Canada. Think about it. The next time you travel for business or pleasure be sure to book a bed and breakfast instead of a Big Business hotel chain. The prices are comparable and sometimes less. No one is paying me to write these posts - not do I own any interest in a "b and b" but hey, if you want to step up and donate feel free! :)

Seriously though, I just thought what a great idea if I could promote small businesses over Big Business. With small businesses the jobs stay here in our country instead of getting shipped overseas for cheaper labor costs and bigger profit. Let's support our local small businesses. By doing so we are supporting the 80 percent that drives our economy. Did you realize that most of the people in America work for small business? Big Business has driven so many smaller businesses out of business like small pharmacies, grocery and hardware stores.

It's been an enjoyable romp through the fields of the internet to locate these muffin recipes. Just when I found one bed and breakfast to be an interesting surprise then another one is discovered to be just as unique. Today's bed and breakfast inn promotes a special package rarely found at a hotel: a murder mystery package deal where you can partake in a weekend of amateur sleuthing fun. How unique is that?





From the website: We are an old-fashioned Bed & Breakfast promoting hospitality as our specialty. Located on a barrier island 8 miles long and approximately 1 mile wide where the sea air and ocean sounds are prevalent.

Designated by the Historic Commission as an Ocean City seashore cottage, our B&B has five Victorian rooms with the modern convenience of queen size beds, one with twin beds, and air conditioners in all guest rooms. Sour Cream Coffee Muffins

Makes: 12 servings

Ingredients:

Filling:

1/4 cup brown sugar
1/4 cup finely chopped walnuts
1/2 tsp ground cinnamon

Mix together.

Muffins:

1/2 cup butter
1/2 cup sugar
2 eggs
1 cup sour cream
1 tsp vanilla
2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt


Directions: Mix butter, sugar and eggs. Add sour cream and vanilla. Add dry ingredients. Spoon 1 Tbsp of mix into prepared muffin pan. Top with 1 tsp filling and then 1 Tbsp batter. Sprinkle remaining filling on top of each muffin. Bake at 375° for 25 minutes. Remove from pan and cool.

They had great fun lampooning all the crazy politics, the economy, Arizona style immigration and Big Business on Wall Street. 26 Funny Political Cartoons - 6 Feb 2010

From Denny: The big Super Bowl weekend match up of the New Orleans Saints against the Indianapolis Colts is in full swing party wise in both cities! The cartoonists predicted the Saints would lose against the Vikings in the NFL Championship and were wrong. Everyone in Louisiana is totally convinced the cartoonists are wrong again about the Saints' hope of winning the Super Bowl. People are practically "wired for sound" around here they are so excited about this team. The Saints had a 44 year drought of misery and to see them win this much is like catnip candy.

The rest of this week's visual opinions were devoted mainly to the President's budget spending and cutbacks, especially NASA. Where the cartoonists really went off on was their anger against Toyota's arrogance in this million plus car recall. Toyota has been declaring customer satisfaction for decades - only now America is finding out they have been hiding the truth about their cars.

Now we find out recently that Toyota hasn't been properly reporting to the U.S. Dept. of Transportation as required by law. Then they continue to insist these same dangerous cars are safe. Toyota car owners need to demand a buy back from the manufacturer as these cars are dangerous to everyone on the road driving near them. Short of that the President better do something serious and fast before this spirals out of control. Can you hear the Toyota used car value falling like a rock? Drive those cars until the wheels fall off or get the parent company to take it back. It's called The Lemon Laws in America.

Just when Toyota thought they would get to surge ahead in the American market to capture a larger share and capitalize on General Motors' and Ford's share of bad karma repercussion slap-back - they now experience their very butt kick.

Choose your projects wisely and plan a lot more carefully, then stick to it and quit with the budget overruns. Obama's next stop needs to be the guys who build military aircraft:

From Denny: The Secret Service took a beating this week as well they should have, how lame can you get? Tiger Woods took another beating, this one from his irate wife fed up with his sleeping around. You go, girl! Send her to Afghanistan to win the war suggests one cartoonist. :) Obama announces his controversial plans to escalate in Afghanistan while the rest of us are war weary. And plenty of Santa cartoons to get you in the mood for the holiday season...

Secret Service and their lame excuses as to why they did not protect the President or the Prime Minister of India adequately... It might as well have been Bart Simpson in charge of security.

Iran dilemma of thumbing their nose at world and going ahead and building now 10 times the number of nukes:



Obama's Afghan War controversial strategy that's just wearing out the public patience after eight years of expensive wars burdening the taxpayers and costing jobs:









Tiger Woods getting beat up by his irate wife for having an idiot affair. It's bad enough the guy is known for being a bad tipper, emotionally stingy and cheap on philanthropy. "Do ya think?" Karma is on his case...?
