Dennys: News Politics Comedy Science Arts & Food: 15 Funny Tasty July Fourth Posts: From Denny:  Hope everyone is enjoying their holiday time off.  It certainly is hotter than ever this summer.  And we have global warming to enjoy for years to come.  So laugh a lot while you are figuring out how to adapt to this new extreme weather sport:  scorching summers.

Muffin Monday: Banana Praline Muffins, White Chocolate Banana Bread

From Denny: In my search to see what's baking at the bed and breakfast inns across America and Canada I found this sweet comfort food for breakfast. This recipe comes from a rustic peaceful Texas inn.

While I live next door in Louisiana where we grow the most awesome pecans, they grow them in Texas too. Both states love the praline for everything from muffins to cakes to bread pudding and sweet potato casserole toppings.

Searching for non-copyrighted photos, this photographer posted this little darling banana bread recipe with the sweet goodness of added white chocolate chips. You can try other variations besides chocolate chips if you like. Tips for baking well and suggestions of ingredients follows the recipe.


Banana Praline Muffins

Las Brisas Farm is located in the heart of Czech-German country and is one mile south from historic Fayetteville where shops and dining reflect yesterday's past. The cottages are set on forty rolling acres where one can appreciate spectacular sunrises and sunsets, and star gaze clear, vast skies. One guest described the setting as eye candy for the soul!


Banana Praline Muffins


Yield: 12 muffins


Ingredients:

3 bananas, ripe - mashed
1 egg
1/2 C. sugar
1/4 C. oil
1 1/4 C. flour
2 t. baking powder
1/4 t. salt

Praline:

3 T. brown sugar
1 T. sour cream
1/2 C. chopped pecans

Directions:

Preheat oven to 400 degrees.

Mix brown sugar and sour cream, add pecans.

Mash bananas; add egg, sugar and oil. Beat well. Add flour, baking powder and salt and mix until just moistened.

Grease muffin tins, and put equal amount of batter in each. Top each with equal amount of praline mix in center of muffin.

Bake for 15 minutes or until golden brown.






White Chocolate Banana Bread by Divine Domesticity @ flickr



White Chocolate Banana Bread

Makes: one loaf

Ingredients:

3 very ripe bananas
2 tbsp soft butter
1 cup sugar
1 + 1/2 cups flour
1 tsp baking soda
1 cup white chocolate chips and /or coarsely chopped nuts – pecans or walnuts work well (optional)

Directions:

1.Preheat oven to 375°/190°C

2.Mash bananas in a bowl and add rest of the ingredients. Stir just until blended. It seems as if there is not enough liquid but don’t be fooled. The very ripe bananas add all the moisture needed. Mixing the ingredients together with a fork for 2-3 minutes is all you need to create the batter.

3.Pour into greased 9"x5" loaf pan and bake for 45 minutes or until toothpick comes out dry (unless of course you hit a chocolate chip).

4.Cool for 10 minutes on a cake rack before removing from pan.

5.To bake muffins, prepare the batter as above and bake for 20-25 minutes at 400°F/200°C, in center of oven


Tips & Variations

* This is a great breakfast or mid day snack.
* Instead of chocolate chips (or with them, if you prefer) try:
chopped walnuts or pecans
dried cranberries or cherries
* Just make sure these ingredients add up to one cup. More than that will lose the bread/cake texture.

Muffin Monday: Pina Colada Muffins

From Denny: Here's a fun little recipe from a bed and breakfast down in Florida. It includes coconut and pineapple for a sweet moist muffin of sheer delight. It's also very easy to make because it employs a yellow cake mix. If you don't have any rum extract you can easily substitute vanilla extract in its place.


*** Remember to support small business in your area and when you travel. Why stay at a Big Business hotel as you travel when you can stay in a more home like atmosphere of a bed and breakfast inn? The prices are comparable, the people friendlier and your stay will be memorable.


Pina Colada Muffins

From: Magnolia Plantation Bed & Breakfast Inn

Makes: 24 Medium muffins.

Ingredients:

1 lb box of yellow or butter cake mix
1 tsp. pure coconut extract
1 tsp. pure rum extract
1 cup flaked coconut
1/2-1 cup chopped nuts (walnuts or pecans)
8 oz. can crushed pineapple, undrained

Directions:

Preheat oven to 350 degrees. Prepare cake batter according to package directions. Add remaining ingredients and mix for 1 minute. (Do not over mix.)
Fill greased muffin cups 3/4 full and bake for 15-20 minutes or until golden brown. Let cool on wire racks.

Muffin Monday: Savory Feta, Roasted Pepper Basil Muffins From Sur La Table

*** Try the unusual: a savory muffin for breakfast, lunch or dinner.





From Denny: We all love muffins. They are that little meal, that special little treat in the late afternoon. They are divine bits of Heaven. Sometimes, I would rather enjoy a savory muffin instead of the sweet.

The American breakfast can quickly become predictable with the usual suspects of eggs, bacon and toast. Banana bread with a little softened cream cheese is wonderful in the morning with eggs. But how about something totally off the wall different?

Feta cheese is a good protein source any time of day and mixes well with so many ingredients. You could even enjoy these muffins alongside those predictable eggs and bacon. This muffin has roasted peppers which are sweet of a savory kind. They would go well too with a soup or salad for lunch. Try them with roasted chicken for a dinner too.

For this recipe make sure to use only fresh basil as opposed to the dried version as they need the fresh oils to punch up the flavor of the muffin. If you don't have any fresh basil, the author recommends substituting a tablespoon of fresh thyme or a teaspoon of dried thyme in its place. Thyme tends to be a pungent herb even when dried.



Feta, Roasted Pepper & Basil Muffins

Makes: 12 muffins

Ingredients:

2 cups (10 ounces) unbleached all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ cup (3 ounces) crumbled feta cheese
½ cup (4 ounces) jarred roasted red bell pepper, patted dry and chopped into ¼-inch dice
3 tablespoons finely chopped fresh basil
1 cup (8 ounces) buttermilk
¼ cup (2 ounces) olive oil
1 large egg


Directions:

Preheat the oven to 375°F and position an oven rack in the center. Lightly coat the muffin tin with melted butter, oil, or high-heat canola-oil spray. Whisk the flour, baking powder, baking soda, and salt in the large mixing bowl. Set aside. In the medium bowl, stir together the feta cheese, roasted bell pepper, and chopped basil. Set aside.

Pour the buttermilk into the measuring cup. Add the olive oil and the egg and whisk together until well blended. Make a well in the center of the dry ingredients. Pour the buttermilk mixture into the well and stir gently with a spatula. Mix only until there are no more streaks of flour or pools of liquid and the batter looks fairly smooth. A few small lumps scattered throughout are fine—they will disappear during baking. Gently fold in the feta cheese mixture until evenly distributed in the batter.

Use the large ice cream scoop or 2 soup spoons to divide the batter evenly among the prepared muffin cups. Bake for 18 to 20 minutes, until the tops feel firm and a skewer inserted into the centers comes out clean. Transfer the muffin tin to a rack and let cool for 5 minutes. Gently run a thin knife or spatula around each muffin to free it from the pan, lift out the muffins, and transfer them to a rack to finish cooling (careful, these are tender while hot). Serve warm.

When completely cool, the muffins can be stored at room temperature, wrapped in plastic or sealed in a resealable plastic bag, for 2 days. Reheat, wrapped in foil, in a 325°F oven for 8 to 10 minutes, until warmed through. The muffins can also be frozen for up to 1 month, wrapped tightly in plastic wrap and then sealed in a resealable plastic freezer bag. Thaw, still wrapped, for 30 minutes before reheating.

Recipe: Peanut Butter Muffins for Brunch or Breakfast



From Denny: I'm putting up two recipes today to fill the peanut butter craving for my friends! This is a wonderful breakfast or brunch or even a snack recipe for muffins. C'mon, when are muffins not enjoyed by us all? They seem to be the ultimate comfort food and this peanut butter version looked like a great one to add to this blog's recipe file. Enjoy!

Brunch Peanut Butter Muffins

Yield: 12 servings

Prep Time: 15 min

Cook Time: 20 min

Ingredients:

• Crisco® Original No-Stick Cooking Spray

BATTER

• 2 cups Pillsbury BEST® All Purpose Flour

• 2 tablespoons sugar

• 1 tablespoon baking powder

• 1 teaspoon salt

• 1 large egg

• 1 cup milk

• 1/3 cup Crisco® Pure Vegetable Oil


TOPPING

• 3 tablespoons sugar

• 3 tablespoons Pillsbury BEST® All Purpose Flour

• 3 tablespoons Jif® Creamy Peanut Butter
OR Jif® Extra Crunchy Peanut Butter

• 1/8 teaspoon salt


Directions:

1. HEAT oven to 400ºF. Spray a 12-cup muffin pan with a no-stick cooking spray or line with paper cups.

2. STIR together flour, sugar, baking powder and salt in medium bowl. Combine egg, milk and oil in small bowl. Add liquids to flour mixture, stirring just until dry ingredients are moistened. Divide batter evenly among cups.

3. COMBINE sugar, flour, peanut butter and salt in small bowl, mixing with fork until crumbly. Divide topping over muffins. Lightly stir into muffin with knife.

4. BAKE 18 to 23 minutes or until golden brown. Cool in pan on rack 5 minutes. Remove from pan to rack to cool completely.
