Sweet Tooth Alert: Sandra Lees Chocolate Truffles

From Denny: OK, all you sugarholics out there in web land, THIS is your recipe! Guaranteed to knock your sweet tooth off its feet and into nirvana land.

As usual, Sandra Lee is quite clever for devising recipes you can do on the fly - or when you forgot you owed something for your kid's school function. :) This recipe is nothing but dressed up and finessed chocolate frosting combined with more powdered sugar, vanilla extract and cocoa powder. Definitely ranks in the "seriously sweet" column. If you see someone feeling faint, just pop one of these truffle candies into their mouths and they will revive instantly.

Sensuous Chocolate Truffles

Cook Time: 0

Level: Easy

Serves: about 36 truffles

Ingredients:

1 (16-ounce) container chocolate frosting (Denny: or make your own favorite)
3/4 cup powdered sugar, sifted
1 teaspoon pure vanilla extract
1/2 cup unsweetened cocoa powder

Directions:

Line 2 cookie sheets with parchment paper. With a hand mixer, beat frosting, powdered sugar, and vanilla in large bowl until smooth. Using a tablespoon measuring spoon or a 1-ounce cookie scoop, form into balls and place on cookie sheet. Dust truffles with cocoa powder. Cover and refrigerate truffles until ready to serve.

Fast and Easy Holiday Appetizers, Chocolate Martini

From Denny: Chef Sandra Lee over at Food Network is one of my favorites because she finds a way to cut the work in half and still have the time and energy to enjoy your guests! Watch one of her episodes and you will be hooked, even if you don't feel ambitious enough to do one of her awesome tablescape themed decorations. She has a great eye for staging, that's for sure.

Enjoy these easy and tasty appetizers for your holiday gathering! You will be the hit of the home you visit when you make and take one of these goodies. Many times my husband and I make these appetizer recipes as a light supper - all with the big excuse that we are trying out future recipes for entertaining. :)

Asiago-ham pinwheels

Makes: 16 pinwheels

INGREDIENTS

• 1 frozen puff pastry sheet, thawed according to package directions
• 2 tablespoons apricot preserves
• 1 1/2 tablespoons Dijon mustard
• 1/4 cup dried currants
• 1/4 cup shredded Asiago cheese
• 1 package (6-ounce) thinly sliced cooked ham

DIRECTIONS

Preheat oven to 400 degrees F. Line 2 baking sheets with parchment paper. On a lightly floured surface, unfold puff pastry sheet. Using a rolling pin, roll sheet into 14 by 11-inch rectangle.

In a bowl, combine preserves and mustard. Spread mixture over puff pastry, leaving a 1/2-inch border. Sprinkle with currants and cheese. Top with ham slices.

Starting with a short side, roll rectangle up in a spiral. Using a pastry brush, lightly moisten edge with water; pinch to seal seam.

Slice pastry roll into sixteen 1/2-inch slices. Place pinwheels, cut sides down, on prepared baking sheets. Bake for 15 minutes or until puffed and golden brown. Serve warm.

Red pepper meatballs

Makes: 6 servings

INGREDIENTS

For meatballs:

• Non-stick cooking spray
• 1 pound lean ground beef
• 4 eggs
• 1 cup seasoned fine dry bread crumbs
• 3/4 cup shredded Parmesan cheese
• 1/4 cup milk
• 1 teaspoon dried Italian seasoning
• 1 tablespoon water
• 2 cups vegetable oil or peanut oil

For red pepper sauce:

• 1 jar (7 1⁄4-ounce) roasted red peppers, drained
• 1/2 cup Catalina salad dressing
• 1 teaspoon dried Italian seasoning
• Fresh thyme sprigs

DIRECTIONS

For zesty fried meatballs: Preheat oven to 425 degrees F. Coat a rimmed baking sheet with cooking spray. In a bowl, combine ground beef, 3 eggs, 3/4 cup bread crumbs, Parmesan cheese, milk, and Italian seasoning. Form into 1-inch meatballs. In a bowl, beat together 1 egg and water. Place 1/4 cup bread crumbs in another bowl. Dip meatballs into egg mixture, then roll in bread crumbs.

In a heavy saucepan, heat oil over high heat. Working in batches, add meatballs to hot oil. Fry until golden brown. Remove meatballs; drain well. Arrange in a single layer on baking sheet. Bake for 10 to 15 minutes or until cooked through (160 degrees F).

For red pepper sauce, in a blender, combine roasted peppers, salad dressing, and Italian seasoning. Cover and blend until smooth. Serve meatballs with sauce. Garnish with fresh thyme.

Festive cheese chips

Makes: 6 servings

INGREDIENTS

• 1 bag (5-ounce) potato chips
• 1/2 cup white sauce
• 1/4 cup cream cheese
• 2 tablespoons crumbled Roquefort cheese
• 1 tablespoon half-and-half
• 1/4 cup blue cheese crumbles

DIRECTIONS

Preheat oven to 350 degrees F. Place chips on baking sheet. Bake 15 minutes.

In a small saucepan, combine white sauce, cream cheese, Roquefort cheese, and half-and-half. Cook over medium heat until cheese melts, stirring constantly. Remove from heat.

Transfer hot chips to serving platter. Drizzle cheese mixture over hot chips. Sprinkle blue cheese crumbles over.

Best ever finger dogs

Makes: 48 dogs

INGREDIENTS

• 1 package (48) small cooked smoked beef sausage links
• 1 container (16.3-ounce) buttermilk biscuits
• 1 cup shredded cheddar cheese
• Mustard or other condiments

DIRECTIONS

Preheat oven to 375 degrees F. Line a baking pan with parchment paper or aluminum foil.

In a grill pan, cook half of the sausage links over medium heat about 5 minutes or until sausage links are plump. Set aside.

On a clean surface, cut each of the biscuits into 6 pieces. Place cheese in a small bowl. Roll each piece of dough in the cheese; shape pieces into balls.

Gently stretch each ball to fit a sausage link. Partially wrap the dough around the sausage. Arrange pillow dogs 1 inch apart on prepared baking pan. Bake for 10 minutes. Serve warm with mustard or other desired condiments.

Choco-mint martini

Makes: 1 drink

INGREDIENTS

• 2 ounces mint chocolate Irish cream liqueur
• 1/2 ounce vanilla flavored vodka
• Ice
• Small candy canes (optional)

DIRECTIONS

In a cocktail shaker, combine Irish cream and vodka. Add ice; cover and shake until very cold. Strain into a chilled martini glass. Embellish with a small candy cane (optional).

Recipes: Easy Fast Pizzas for Labor Day or Football Tailgating!



Easy double-crusted meaty filling pizza!

From Denny: Just finished watching this Casino Night episode on Semi-Homemade Cooking with Sandra Lee on the Food Network and let me tell you the woman knows how to take shortcuts and still make it tasty and easy!

Meaty Stuffed Pizza

Cook Time: 20 min
Level: Easy
Yield: 4 servings

Ingredients:

2 (6.5-ounce) packages pizza crust mix (recommended: Betty Crocker)

2 teaspoons Italian seasoning (recommended: McCormick's)

1 cup hot water

For the Filling:

1 tablespoon oil

1/2 pound lean ground beef

1/2 pound hot Italian sausage, casings removed

1 (2.5-ounce) jar sliced mushrooms, drained (recommended: Green Giant)

1 (2.25-ounce) can sliced black olives, drained (recommended: Early California)

2 1/2 cups marinara sauce, divided (recommended: Prego)

2 cups shredded mozzarella cheese (recommended: Kraft)

Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.

For the dough:

In a large mixing bowl, combine pizza crust mixes, Italian seasoning, and hot water. Stir about 20 times until a ball forms. Split ball in half and cover each with plastic wrap; set aside.

For the filling:

In a large frying pan over medium-high heat, add the oil and cook ground beef and sausage, stirring frequently to break up clumps. Cook until no longer pink but not totally cooked through, about 4 minutes. Remove from heat and stir in mushrooms, olives, cheese and 1 cup of the marinara sauce; set aside.

Unwrap dough and put onto 2 parchment lined baking sheets sprinkled with cornmeal. Press out into 2 (12-inch) circles about 1/4-thick; pinch together any holes. Spoon the meat mixture into center of each dough round. Slide the second dough circle off the parchment to top the meat mixture. Crimp the edges together. Gently pat entire surface of pizza until flat. Slide pizza onto hot oiled grill. Cook, covered, for about 5 to 6 minutes per side.

Warm the remaining marinara sauce in the microwave. Spoon some sauce on the plate and serve a hot slice of pizza on top.

Preheat oven to 425 degrees F. Lightly spray baking sheet with cooking spray; set aside. Prepare stuffed pizza as directed. Place on prepared baking sheet and bake in preheated oven for 20 to 25 minutes or until golden brown.

Chicken Caesar Pizza

This chicken pizza idea was so fast using chicken tenders that she quickly doused in caesar salad dressing and then straight into the saute pan. Nothing could be faster. What this woman can do with just one bottle of salad dressing. :) She even used the dressing to brush on the baked pizza shell before applying the cheese and then the cooked chicken tenders. The salad is applied after all is baked and the cheese delightfully melted.

Chicken Caesar Salad Pizza


Cook Time: 20 min
Level: Easy
Yield: 4 servings

Ingredients:

3/4 pound chicken tenders

1/2 cup Caesar salad dressing, plus 2 tablespoons (recommended: Wishbone)

1 (12-inch) thin pizza crust (recommended: Boboli)

1 3/4 cups shredded mozzarella and asiago cheese (recommended: Sargento)

1/4 cup shredded Parmesan (recommended: Kraft)

Directions

For Salad Topping:

4 cups hearts of romaine, shredded (recommended: Ready Pac)

1 tablespoon lemon juice (recommended: ReaLemon)

1/4 cup Caesar salad dressing (recommended: Wishbone)

1/4 cup shredded Parmesan (recommended: Kraft)

1 cup seasoned croutons (recommended: Marie Callender's)

Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.

In a bowl, combine chicken tenders with 1/2 cup salad dressing; set aside. Brush pizza crust with remaining 2 tablespoons of dressing and top with cheeses; set aside.

Remove chicken from marinade and cook on hot oiled grill for 3 to 4 minutes per side or until just done. Remove from grill and place on top of pizza.

Slide pizza onto grill and cook, covered, 8 to 10 minutes, or until cheese has melted and begun to bubble.

For the topping:

While pizza is cooking, toss shredded romaine with lemon juice. Add 1/4 cup dressing and 1/4 cup Parmesan. Toss and set aside.

Remove pizza from grill and cut into wedges. Top with salad and garnish with croutons. Serve immediately.

Preheat oven to 450 degrees F. Complete step 2 as directed. Heat 2 tablespoons of oil in a large frying pan. When oil is hot, saute chicken strips for 4 to 6 minutes or until cooked through. Remove chicken from pan; place on top of pizza. Bake in preheated oven for 8 to 10 minutes, or until cheese is melted and begun to bubble. Complete pizza as directed.

Grilled Fruit Pizza

Then for dessert is this awesome, easy recipe that is so delicious!
I'll have to wing this one from memory as it wasn't available on the site. It's too easy.

Get a pizza dough from the can, flatten out on a baking sheet. Brush with some honey and water mixture. Bake according to directions on the can for the dough.

Then take 1 stick of butter, some (about 8 oz.) cream cheese and powdered sugar to get a thick creamy spread and lather up the pizza bread. Then sprinkle with mixed berries of strawberries, blueberries and raspberries. You can use fresh or do like Sandra did and thaw out frozen ones, drained and then placed on top. The thick spread holds them in place and the heavy pizza bread is strong enough to hold all those berries and spread! Delicious!

Note: As to the spread, if you want fewer calories and oil you could substitute that butter for no fat or low fat sour cream and no fat cream cheese. You might have to thin a bit with a little milk to get your spreadability (it looks like thick Greek yogurt).

Video: Money-Saving Meals from Sandra Lee

Slow-cooked orange margarita tacos

Throw a cheap but fabulous party by making margarita tacos

From: Chef Sandra Lee
Makes 10 servings$14.03, $1.40 per person

Prep time: 15 minutes

Cook time: 8 hours

Inactive prep time: 5 minutes

Ease of preparation: Easy

INGREDIENTS

1 medium onion, chopped

1/2 cup margarita mix with orange liquor added

1 10-pound bone-in pork shoulder picnic

Salt and pepper

1 tablespoon chopped garlic

2 tablespoons soy sauce

1 cup orange marmalade

20 corn tortillas

DIRECTIONS

Place the onions and margarita mix and liquor in the bottom of a 5-quart slow cooker. Season the pork roast with salt and pepper. Stir together garlic and soy sauce and rub all over pork roast. Place the roast in the slow cooker and spoon marmalade over the top. Cover and cook on low for 8 hours.

When meat is done, remove from slow cooker, let rest for 5 minutes then shred or break up with a fork and arrange on platter. Strain sauce and stir 1 cup into shredded pork.

Warm tortillas slightly in a 250° F oven or in microwave. Set out pork and tortillas with red cabbage slaw and have guests assemble their own tacos.

Simple red slaw

INGREDIENTS

1 small head red cabbage

4 medium carrots, coarsely grated

1/4 cup cider vinegar

1 teaspoon salt

Fresh-ground black pepper

DIRECTIONS

Finely shred cabbage with a sharp knife. Mix cider vinegar, salt and pepper in a large bowl. Toss, add cabbage and carrots and toss to combine.

Use as topping for pulled pork tacos.

Grilled corn and bean salsa with baked corn chips

Makes 10 servings$4.29, $.43 per person

Prep time: 10 minutes

Ease of preparation: Easy

INGREDIENTS

4 ears corn, shucked or 4.5 cups frozen corn kernels

1 tablespoon vegetable oil

Kosher salt and freshly ground pepper

1 teaspoons chili powder

1 can (28 ounces) diced tomatoes (well drained)

1 can (15 ounces) black beans (drained and rinsed)

1/2 medium red onion, diced

1 minced jalapeno

1 teaspoon chopped garlic

2 tablespoons lime juice

1/4 cup chopped cilantro

DIRECTIONS

For salsa:
Set up grill for direct cooking over medium heat.

Brush corn with oil and season with chili powder, salt and pepper. Place on hot grill and cook 8 to 12 minutes, turning frequently. Remover and let cool. When cool enough to handle, cut kernels from the cob. Place corn in a bowl with tomatoes, beans, onion, and jalapeño. Whisk together lime, garlic, cilantro. Pour over vegetables and beans and toss to combine. Season with salt & pepper.

Optional indoor roasted corn: Preheat oven to 400°. Cut corn kernels from cob and place on baking sheet. Drizzle with oil, chili powder, salt and pepper. Roast in over for 8 to 10 minutes. Remove and let cool.

For chips:

Preheat oven to 400°

Cut each tortilla into 8 triangular portions. Arrange in a single layer on a sheet pan. Spray with canola oil cooking spray, sprinkle with salt and bake until crisp and lightly browned, about 10 minutes.

Allow to cool and serve with salsa.

Recipe: Slow Cooker Cheesecake

From Denny: This unusual method for baking a cheesecake really caught my eye today! Chef Sandra Lee from the Food Network has launched a new cost effective meals program called Sandra's Money Saving Meals.

This woman is stuffed full of personality AND she can cook well within a budget! Well, Louisiana food is all about the wallet and innovation. We often adopt smart ideas like the one presented today.

We sure love our cheesecake in this state as one version or another in on restaurant menus from diner to sophisticate. Give this one a try and save on your electricity as a slow cooker generally costs about three cents an hour to operate as opposed to a full oven for much more. Definitely more "green." Hope you enjoy!


Slow Cooker Cheesecake

Prep Time: 10 min
Inactive Prep Time: 1 hr 0 min
Cook Time: 1 hr 30 min
Level: Easy
Serves: 8 servings


Ingredients For Cheesecake:

1 (15-ounce) container ricotta

3/4 cup sugar

3 eggs

1 teaspoon vanilla extract

1 orange, zested

Pinch salt

1 (9-inch) prepared graham cracker crust


For Topping:

1 (15-ounce) can peaches, juice reserved and peaches chopped

1 orange, juiced

2 teaspoons cornstarch

1 tablespoon sugar

Pinch salt


Directions For Cheesecake:

Puree ricotta in a food processor until smooth. Scraping down the sides. Add the sugar and puree for approximately 1 minute so that it is not grainy. Add the eggs, vanilla, orange zest and salt. Puree until smooth and combined.

Place a small bowl in the bottom of a 5 quart slow cooker and place a small plate on top of the bowl. Place pie crust on top of the plate and pour the filling into the pie crust. Place 4 paper towels over the top of slow cooker bowl making sure not to let the towels touch the top of the cheesecake. Secure with lid and cook on high setting for 1 1/2 hours, or until set. Remove from slow cooker and let sit for 30 minutes, then refrigerate for 30 minutes or until chilled.

For Topping:

In a small pot whisk together the reserved peach juice, orange juice, cornstarch, sugar and salt. Stir in the chopped peaches and heat over medium heat. Cook until liquid thickens about 5 minutes. Remove from heat and serve warm over a slice of cheesecake.


* If you prefer to bake in an oven rather than a slow cooker *

Oven Instructions: Preheat oven to 325 degrees F.

Place the pie crust into a baking dish or roasting pan large enough to accommodate the pie tin. Pour the filling into the crust. Add about 1-inch of warm water into the bottom of the baking dish and cover with foil. Using a skewer, pierce about 12 holes into the foil to allow steam to vent. Bake for 50 minutes to 1 hour or until cheesecake set. Remove cheesecake from water bath and let rest on the counter for 30 minutes. Then place in the refrigerator for 30 minutes or until chilled.
