Summer Food: Raspberry Almond Cheesecake Tartlets

From Denny:  Do you enjoy cheesecake but want an easier way to make it?  Then this recipe is for you.  I like cheesecake too but find it too large for just two of us to eat and too time consuming to make unless I plan on entertaining a hungry crowd.  

A springform pan is an absolute must to make a proper cheesecake - and the patience of a saint to leave the oven door cracked open as it slowly cools down for hours so you can hopefully avoid it cracking straight down the middle like an ugly scar.  Usually, I've been pretty lucky over the years.  Of course, when I wasn't lucky it was evident that a wonderful fruit topping like blueberry or strawberry could hide a multitude of sins just like gravy on a screwed up dinner. :)

Well, this recipe from food writer Helana Brigman is for the cheesecake challenged and the impatient.  You make this cheesecake in mini tartlets pans that are individual portions in just bite sized pieces rather than a huge honking slice of 6,000 calories like you get served at the Cheesecake Bistro.

What's involved in this recipe is to first make a simple graham cracker crust you crush up in your food processor or blender.  If you don't have that available then resort to the manual method of crushing graham crackers between two pieces of waxed paper using a pastry rolling pin.  

If you are really desperate just use a heavy jar of applesauce or canned "something" to roll over the waxed paper.  Yes, I have been wildly creative over the years, especially when the weather was too yucky to run out and get an ingredient that was missing or the electricity went out.  During hurricanes it's easy to get bored so you start working on what you can for a meal until the electricity comes back on to finish it.

The cheese filling could not be simpler:  cream cheese, vanilla, sugar and lemon zest.

The fruit glaze is made with fresh ripe strawberries, sugar, cornstarch and lemon juice that you heat up in a nonstick pan.  If you don't like nonstick pans like I don't then use a double boiler.  Just place medium high heated water in bottom pot that is turned down to a slow simmer and place a smaller pot or even a pasta bowl on top to heat your ingredients.  Just be careful as you remove the cooked fruit glaze from the bottom pot because the steam can burn you.

Assemble by lightly spraying your tartlet pans with oil or rub with a little soft butter.  Press the crushed graham cracker crumb mixture until you line the sides well.  Bake the crust.  Make your cheese filling and spread over the cooled crusts.  Make your fruit glaze, cool it, and then spread onto the tartlets.  There will be leftover fruit glaze you can enjoy on your pancakes or ice cream.  Rinse your raspberries and arrange in the center of the tartlets with sprinkles of sliced almonds all along the outside edges in a ring.

Now contain yourself and any sticky fingers in the house!  Chill the assembled tartlets for three hours before serving.  If you plan to keep them overnight - or if they survive that long at your house - then be sure to cover with plastic wrap to prevent them from losing moisture or absorbing any possible refrigerator odors.

Holiday Recipe: Appetizer Crabmeat Cheesecake With Gruyere and Mascarpone

From Denny:  This easy recipe is a big hit during the holidays or any big gathering!  Crabmeat is expensive, especially fresh.  What is great about this recipe is that a mere one pound of fresh crabmeat can feed a crowd because this rich recipe is set up as an appetizer.  

Fresh crabmeat is always the most tasty but if all you can procure is frozen then go ahead and use it.  Just know that if you use frozen crabmeat it may get a bit watery on the top of the cheesecake near the end of the baking time.  So, if that should happen then just pour off any of the clear liquid that might form.  

If you happen to have any leftover crabmeat cheesecake you can warm it the next day, serving a small piece with a large green salad on the side!  Bon Appetit!

Thanksgiving: Layered Pumpkin Cheesecake

From Denny:  This is the perfect holiday table dessert!  It's so showy it's sure to impress.  Three layers of tasty goodness are the gingersnap cookie crust as it's sturdy foundation to hold the spiced pumpkin cheese layer that is marbled with a vanilla layer.

Like most big cheesecakes, this one should be baked in a springform pan, where the cake cools in the pan for several hours before you remove the sides of the pan.  If you have never used a springform pan, it's so easy it will make you laugh, definitely nothing to be intimidated about at all. 

Like any tasty cheesecake, this one is rich in calories too, so a small serving would be welcomed by most.  At a dinner party I like to cut a normal to small sized slice, placing it on one plate and then encourage couples to share so people don't have to feel guilty about busting their diet plan.  After all, the whole point of entertaining is for people to enjoy their tasty treats!...

Summer Recipe: Cool Fake Watermelon Cheesecake

From Denny:  This is such a fun colorful cheesecake to make that is sure to impress for any special holiday or occasion!  While it looks like watermelon it's really a strawberry flavored cheesecake supported by a delicious coconut and pistachio crumble crust that imitates the watermelon rind.  How clever is that?  And you know it sure tastes better than the rind. :) To imitate the look of the watermelon seeds you garnish the cheesecake with mini chocolate chips.  

The beauty of this cheesecake is that you don't have to bake it.  Everything is done on the stove top and then chilled.  Well, I'm sold; ready to start cooking?  

With some extra effort - on a slow lazy weekend when you have some time - this might be fun to make in small mini cheesecakes.  It could be one of those special treats you can pull out at the last minute when unexpected company shows up for a visit and you don't have the time to stop and shop. 

You could probably freeze this cheesecake (the large or the mini versions) before garnishing with the mini chocolate chips, especially if you are only cooking for two and just can't eat an entire cheesecake.  I wouldn't freeze it with the chocolate chips as chocolate tends to get an unattractive bloom on it when frozen and then thawed.  It's your call.  I often freeze cheesecakes I make as we like smaller portions at our house  to control the calories and because we find cheesecake so rich a dessert.  Sometimes I freeze cheesecake in well wrapped slices or take the time to make the smaller tart size.

Kid Friendly Recipe:  This recipe would be fun to do with older children to help teach them more about cooking.  They could easily help make the crust and help mix the cream cheese mixture.  You would have to supervise the stove top cooking of the frozen strawberries and dealing with the red food coloring as that could get quite messy. :)  But kids could help sprinkle the gelatin over the pan of cooked strawberries and help you stir until dissolved.  You might want to be the one to add the red food coloring and let them stir it into the mixture.  Kids are definitely up to helping decorate with the mini chocolate chips - though you may find quite a few missing before they land on the cheesecake!

Recipe: Slow Cooker Cheesecake

From Denny: This unusual method for baking a cheesecake really caught my eye today! Chef Sandra Lee from the Food Network has launched a new cost effective meals program called Sandra's Money Saving Meals.

This woman is stuffed full of personality AND she can cook well within a budget! Well, Louisiana food is all about the wallet and innovation. We often adopt smart ideas like the one presented today.

We sure love our cheesecake in this state as one version or another in on restaurant menus from diner to sophisticate. Give this one a try and save on your electricity as a slow cooker generally costs about three cents an hour to operate as opposed to a full oven for much more. Definitely more "green." Hope you enjoy!


Slow Cooker Cheesecake

Prep Time: 10 min
Inactive Prep Time: 1 hr 0 min
Cook Time: 1 hr 30 min
Level: Easy
Serves: 8 servings


Ingredients For Cheesecake:

1 (15-ounce) container ricotta

3/4 cup sugar

3 eggs

1 teaspoon vanilla extract

1 orange, zested

Pinch salt

1 (9-inch) prepared graham cracker crust


For Topping:

1 (15-ounce) can peaches, juice reserved and peaches chopped

1 orange, juiced

2 teaspoons cornstarch

1 tablespoon sugar

Pinch salt


Directions For Cheesecake:

Puree ricotta in a food processor until smooth. Scraping down the sides. Add the sugar and puree for approximately 1 minute so that it is not grainy. Add the eggs, vanilla, orange zest and salt. Puree until smooth and combined.

Place a small bowl in the bottom of a 5 quart slow cooker and place a small plate on top of the bowl. Place pie crust on top of the plate and pour the filling into the pie crust. Place 4 paper towels over the top of slow cooker bowl making sure not to let the towels touch the top of the cheesecake. Secure with lid and cook on high setting for 1 1/2 hours, or until set. Remove from slow cooker and let sit for 30 minutes, then refrigerate for 30 minutes or until chilled.

For Topping:

In a small pot whisk together the reserved peach juice, orange juice, cornstarch, sugar and salt. Stir in the chopped peaches and heat over medium heat. Cook until liquid thickens about 5 minutes. Remove from heat and serve warm over a slice of cheesecake.


* If you prefer to bake in an oven rather than a slow cooker *

Oven Instructions: Preheat oven to 325 degrees F.

Place the pie crust into a baking dish or roasting pan large enough to accommodate the pie tin. Pour the filling into the crust. Add about 1-inch of warm water into the bottom of the baking dish and cover with foil. Using a skewer, pierce about 12 holes into the foil to allow steam to vent. Bake for 50 minutes to 1 hour or until cheesecake set. Remove cheesecake from water bath and let rest on the counter for 30 minutes. Then place in the refrigerator for 30 minutes or until chilled.

Recipe: Oreo Cheesecake Bites



From Denny: Here's an easy little gem that sounds absolutely DIVINE to make for this Easter weekend! You could always substitute another hard cookie that your family enjoys or you just have on hand.

The ancient Romans always used cheese in their cakes and make cheesecake for their Spring celebrations. Here's an easy recipe for your family!

Ingredients:

36 OREO Cookies, divided

1/2 cup (1 stick) butter or margarine, divided

4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened

1 cup sugar

1 cup BREAKSTONE'S or KNUDSEN Sour Cream

1 tsp. vanilla

4 eggs

4 squares BAKER'S Semi-Sweet Chocolate



Directions: HEAT oven to 325°F. Line 13x9-inch baking pan with foil, with ends extending over sides of pan. Finely crush 24 cookies. Melt 1/4 cup butter; mix with crumbs. Press onto bottom of prepared pan.

BEAT cream cheese and sugar with mixer until blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, beating after each just until blended. Chop remaining cookies. Gently stir into batter; pour over crust.

BAKE 45 min. or until center is almost set. Cool. Meanwhile, microwave chocolate and remaining butter in microwaveable bowl on HIGH 1 min.; stir until smooth. Cool slightly; spread over top of cheesecake. Refrigerate 4 hours. Use foil handles to lift cheesecake from pan before cutting to serve.

Recipe: Coco-Cherry Cheesecake Bars

Coco-Cherry Cheesecake Bars

INGREDIENTS

1 roll (16.5 oz) Pillsbury® refrigerated sugar cookies

1 egg, separated

1 package (8 oz) cream cheese, softened

2 eggs

1 can (14 oz) sweetened condensed milk (not evaporated)

1/4 teaspoon almond extract

3 drops red food color

1 jar (10 oz) maraschino cherries, finely chopped, drained on paper towels

1 bag (12 oz) semisweet chocolate chips (2 cups)

1/2 cup butter or margarine

1/2 cup whipping cream

DIRECTIONS

1. Heat oven to 350°F. In ungreased 13x9-inch pan, break up cookie dough. With floured fingers, press dough evenly in bottom of pan to form crust. Bake 10 to 15 minutes or until light golden brown.

2. Meanwhile, in small bowl, beat 1 egg white until frothy. Brush egg white over crust. Bake 3 minutes longer or until egg white is set.

3. Meanwhile, in large bowl, beat cream cheese with electric mixer on medium speed until smooth. Add egg yolk, 2 eggs, the condensed milk, almond extract and food color; beat until well blended. Stir in chopped cherries.

4. Pour cherry mixture evenly over crust. Bake 16 to 20 minutes longer or until set. Cool completely, about 45 minutes.

5. Meanwhile, in medium saucepan, heat chocolate chips and butter over low heat, stirring frequently, until melted and smooth. Remove from heat. Cool 20 minutes.

6. Stir whipping cream into chocolate mixture until well blended. Spread over cooled bars. Refrigerate about 30 minutes or until chocolate is set. For bars, cut into 8 rows by 6 rows. Store in refrigerator.

High Altitude (3500-6500 ft): No change.

Pine Nut Ricotta Cheesecake with Macerated Strawberries

Here’s a little beauty of a dessert high in protein! Perfect for the weekend gathering.

Cheesecakes are immensely popular in Louisiana. Because of the Italian and Sicilian descendants who made their homes in Louisiana over a century ago there is a great respect for Italian ingredients like ricotta cheese.

While it is true that ricotta cheese is high in fat it is also high in protein. Just anticipate your calories for the day, adjust them accordingly and then cut a smaller slice to enjoy without worry!

Minneapolis, Minnesota

Yield: 12 servings – preparation time is 1 ½ hours plus baking and chilling times


Ingredients for Macerated Strawberries:


Two (12-oz.) cartons fresh strawberries, washed, hulled and quartered

½ cup sugar

1 Tablespoon Grand Marnier

Ingredients for Pine Nut Crust:

1 ½ cup all purpose flour

¼ cup sugar

¼ cup pine nuts, toasted and chopped

½ cup (1 stick) unsalted butter

1 large egg yolk


Ingredients for Ricotta Cheesecake Filling:


8 ounces cream cheese, softened

1 cup ricotta cheese

2 large eggs

4 large egg yolks

1 cup light corn syrup

½ cup pine nuts


Garnish:

Sweetened whipped cream


Directions for Macerated Strawberries: Toss together strawberry quarters, sugar and Grand Marnier and allow to macerate, covered, for at least 2 hours or until strawberry juices are released.


Directions to make crust: Position a rack on lower shelf of oven and preheat oven to 350° F.

In bowl of an electric mixer, using paddle attachment, combine flour, sugar, pine nuts, butter and egg yolk. Mix just until the mixture starts to come together as a dough. If it seems dry, add a little water. Shape dough into a disc. Wrap in plastic wrap and refrigerate for 1 hour.

On a floured piece of parchment paper, roll out dough into a circle about 13” in diameter. Line an 11” tart pan with removable bottom with dough and trim off excess dough. Line dough with parchment and fill halfway with beans, rice or pie weights. Par-bake the shell for 10 minutes; remove the parchment paper and weights and bake for another 12-15 minutes, until light golden brown. Set aside to cool. Lower oven temperature to 325° F.


Directions to make Ricotta Cheesecake Filling: Place cream cheese, ricotta cheese, eggs and yolks in food processor and process until fully combined. With machine running, gradually pour in light corn syrup. Pour mixture into cooled tart shell. Sprinkle whole pine nuts over filling. Bake cheesecake for 40-45 minutes, until set.
Chill tart for at least 1 hour before serving. Serve each slice with macerated strawberries and a dollop of whipped cream.
