Muffin Monday: Mushroom Dill Muffins From Louisiana Mushroom Farm

From Denny: Here in Louisiana most people never gave much thought to farming mushrooms. OK, I thought about it and people thought I was crazy. Well, turns out there are some other crazy people who thought it was a great idea too. After all, it doesn't take up a lot of room and it's a crop that grows in the dark. How cool is that? Yes, I also have a science blog. It really shows sometimes. :)

Well, Johnnie and Cheryl Santangelo of Independence, Louisiana, pressed ahead and now three years later they are the proud owners of the only mushroom farm in Louisiana. And do they have some yummy recipes too! After all, mushrooms are the ultimate brain food and what a delicious way to feed our brains.

"We started at zero," remembered Johnnie Santangelo. "Neither Cheryl nor I knew anything about mushrooms. Absolutely nothing! All we did know was that there was this old mushroom farm that has sat abandoned just down the road from our home. Years ago, it had been land my dad had leased for cattle. We were looking for investment property and this looked like it."

Johnnie and Cheryl both teach at Loranger High School. He is an agriculture teacher and she is the assistant principal.

"Yeah, like weeds and trees and vines that we had to hack away with machetes just to be able to open the doors of the buildings," said Cheryl. "Once inside, we found the only thing growing there were water moccasin snakes. I was terrified and not about to go in there.

Explaining the history of the previous owners of this mushroom farm, "The place had been run as a mushroom farm by a man from Pennsylvania as an investment for another man in New Orleans. At some point, the two men had a disagreement and the man who was running the farm, just walked away from it and left everything. The people who were left behind didn’t know anything about mushrooms so the place was just locked up. Just as it was.

"My husband, my son Johnnie III and some others went in and cleaned out the buildings. We found everything just as it had been left 18 years earlier. I even found the first dollar that the original owner had earned and left behind. He just walked away from it. I framed that dollar bill along with the first dollar we made. To say the place we found was a mess would be a gross understatement.

"To be honest, I don’t think anybody even knew those buildings were there. But once all was said and done, we knew that we were going to grow mushrooms … and that we would be successful."

These educators and their son grow three types of mushrooms from two species: the grocery store familiar white button and the portabella. When the portabella are picked at an early stage and small they are labeled as creminis. If you allow the portabellas to grow and mature they are the coffee brown large umbrellas that almost have the texture of steak and will win over most meat eaters to veggies.

The production level these days for this farm is 18,000–23,000 pounds of mushrooms. That many pounds of mushrooms are produced in each room and each week all year long. Their profit line went from zero to $200,000 and growing in only three years. Sounds like my crazy idea was not so crazy after all. :) Congrats to Johnnie and Cheryl Santangelo.

Mushroom Dill Muffins


From: Johnnie and Cheryl Santangelo of Independence, Tangipahoa Parish, Louisiana, owners of Red Hill Mushroom Farm


Tender, earthy mushroom muffins enhanced with dill. Serve along side soup. Use a mini-muffin pan for perfect little “mushrooms.”

Ingredients:

2 tsp. butter (or margarine)
2 cups chopped fresh white mushrooms
1¼ cups all-purpose flour
1 ½ tsp. Baking powder
¾ tsp. dill weed
½ tsp. baking soda
¼ tsp. pepper
2 large eggs
10 oz. can of condensed cream of mushroom soup or your fresh mushroom soup
¼ cup melted butter (or hard margarine)
¼ cup milk
2 tsp. lemon juice

Directions:

Melt first portion of butter in large frying pan on medium-high. Add mushrooms. Cook for 10 to 15 minutes, stirring occasionally, until mushrooms are browned and liquid is evaporated. Let cool.

Measure next 5 ingredients into large bowl. Stir. Make a well in center.

Beat remaining 5 ingredients with whisk in medium bowl. Add to well. Add mushrooms. Stir until just moistened. Fill greased mini-muffin pan(s) 3/4 full. Bake in 375 degree oven for 15-20 minutes or until wooden toothpick inserted in center of muffin comes out clean. Let stand in pan for 5 minutes before removing to wire rack to cool. Makes approximately 4 dozen mini-muffins or 12 large muffins.

Awesome Easy Frozen Raspberry Layer Cake and Strawberry Shortcake Cupcakes

From Denny: The weather is turning hotter and more humid now that pollen season is gone so what do our minds turn to thinking? Ice cream and frozen cakes! This cake is made with frozen pound cake, ice cream and sorbet. If you don't have any raspberries then substitute strawberries and strawberry sorbet. Isn't it just beautiful?

You could even make this cake for the special daughter or granddaughter in your life who loves the color pink. It's also a very pretty and showy cake for entertaining as school graduations are coming up along with weddings.

And check out this sour cream cupcake recipe from Redbook. Are these guys not clever or what? They updated the strawberry shortcake idea by turning it into a cupcake where you poke holes in the cupcake and drizzle strawberry syrup juice over it to flavor the cake, then top with whipped cream and strawberries. Awesome! Great for parties too.


Frozen Raspberry Layer Cake

From: Country Living

Serves: 8 to 10

Ingredients:

2 (10-3/4-oz.) frozen pound cakes, crusts removed, sliced into 1/4-inch-thick slices
3 cups vanilla ice cream, slightly softened
4 cups raspberry sorbet, slightly softened
1 pint fresh raspberries, rinsed and picked over
3 tbls. Chambord, or other raspberry-flavored liqueur

(From Denny: I love Chambord as it's flavor is more mellow yet intense berry flavor compared to other liqueurs. The expensive is worth the price but do try to use it up inside 6 to 8 months or refrigerate it after opening. Goes great in dark roast coffee too.)


Directions:

1. Prepare the pan: Trace and cut out a 9-inch circle from parchment paper and fit it into the bottom of a 9-inch springform pan. Cut out a 3x27-inch strip of parchment and fit around inside of pan. Tape to secure parchment paper and set aside.

2. Assemble the cake: Cover bottom of pan with a single layer of pound cake slices and spread ice cream evenly over cake. Freeze until ice cream hardens — about 25 minutes.

3. Spread 2 cups sorbet over ice cream, followed by another layer of pound cake slices. Return cake to freezer for 10 minutes.

4. Combine raspberries and Chambord in small bowl. Remove cake pan from freezer and place berries evenly over cake.

5. Top with a final layer of pound cake and remaining sorbet. Wrap tightly with plastic wrap and freeze until firm — at least 4 hours.







Strawberry Shortcake Cupcakes

From:
Redbook

Serves: 12

Ingredients:

Cupcakes:


1 1/3 cups all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup unsalted butter, softened
2/3 cup granulated sugar
2 large eggs
1-1/2 tsps. vanilla extract
2/3 cup sour cream

Topping:

1 quart strawberries, cleaned, hulled, thickly sliced
1/3 cup granulated sugar
1 tbl. lemon juice
1-1/2 cups cold heavy cream
3 tbls. confectioners’ sugar
1 tbl. vanilla extract


Directions:

1. Heat oven to 350 degrees. Line 12 standard muffin cups with paper liners.

2. In medium bowl, whisk to blend flour, baking powder, baking soda and salt.

3. In large bowl with mixer on medium, beat butter and sugar until creamy. Beat in eggs, 1 at a time, then vanilla. With mixer on low, alternately beat in flour mixture and sour cream until combined. Continue to beat until batter is smooth.

4. Spoon batter into a zip-top bag. Snip a 1/2-inch corner from bag and fill liners slightly less than 2/3 full. Bake 24 to 26 minutes or until a pick inserted in the center comes out clean. Cool in pan on a wire rack 5 minutes; remove cupcakes from pan and cool completely.

5. Toss strawberries several times in a bowl with sugar and lemon juice until very syrupy.

6. In large bowl, beat cream, confectioners’ sugar and vanilla until soft peaks form.

7. Use a skewer to poke holes in top of each cupcake. Spoon some syrup from strawberries over top, allowing it to absorb into cupcakes. Top with berries and whipped cream. Put a few sliced berries in the whipped cream and drizzle with remaining strawberry syrup.

Triple Chocolate Toffee Brownies

From Denny: Who doesn't love brownies? If more people fought wars with brownies instead of bullets there would be no squabbles worth fighting! :)

Here's a recipe I ran across in our local newspaper when they were doing a cookbook review on a Food and Wine cookbook that features the best recipes from many recently published cookbooks. This recipe really loads you up on chocolate: semi-sweet chocolate, unsweetened chocolate, mini-chocolate chips and then toffee chips. Whew! A serious download of chocolate and intense flavor. Sounds like pure Heaven.

Remember to stick with unsalted butter as the chocolate chips already have some salt in them - and eggs have natural salt in them too. Trust the recipe; you don't need to add any more salt.

Triple Chocolate-Toffee Brownies


Ingredients:

6 ozs. semisweet chocolate, chopped
3 ozs. unsweetened chocolate, chopped
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 stick (4 ozs.) unsalted butter, at room temperature
1-1/2 cups sugar
4 large eggs, room temperature
1/2 cup whole milk, at room temperature
2 tsps. pure vanilla extract
1 cup toffee bits
1/3 cup mini-chocolate chips

Directions:

1. Preheat the oven to 350 degrees. Spray a 9x13-inch baking pan with nonstick cooking spray and line with parchment paper, allowing the parchment to hang over the edges.

2. In a medium glass bowl, microwave semisweet and un-sweetened chocolates at high power in 30-second intervals until melted, about 2 minutes. In small bowl, whisk flour with baking powder and salt.

3. In a standing mixer fitted with the paddle, beat the butter with the sugar at medium-high speed until pale yellow, about 3 minutes. Add the eggs one at a time, beating well between additions. Scrape down the side of the bowl. Add the melted chocolate and beat until incorporated. Beat in the milk and vanilla at low speed. Beat in the flour mixture, then beat in 2/3 of the toffee bits and the minichocolate chips until evenly distributed.

4. Scrape batter into the prepared pan and smooth the surface. Sprinkle with the remaining 1/3 cup of the toffee bits. Bake the brownies for about 35 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.

5. Set brownies on a rack to cool completely, about 2 hours. Refrigerate for 30 minutes before cutting. Use the parchment overhang to lift the brownie out of the pan; cut into squares and serve.


Make ahead: Store brownies in an airtight container at room temperature for up to 3 days.

Authors’ note: Toffee bits are available in the baking aisle of most supermarkets, but you can also crush up a toffee bar for this recipe (even a chocolate-covered one will work.)

Weekly Posts Roundup at Dennys Blogs - 11 Apr 2010

From Denny: This has been a wild week. The starting weeks of pollen season and we all have been sneezing and experiencing watery eyes and sheer misery. I've come to the conclusion that the attack of the killer plants is all about putting our bodies on overload so we will start dumping winter's toxins. Spring is the time of year when our livers go through detox - and do it for free! The Big However is that it can be inconvenient scheduling to say the least. When the liver starts detoxing you get sluggish, lethargic and sleepy, not exactly productive. See? Nothing is wrong with you after all; it's just Nature's regular Spring house cleaning. Tell that to your boss while you are dragging in to work or not as peppy as usual... :)

Seems like Blogger has had issues this week as well. It's been sheer hell trying to get anything published. The old editor will accept editing and copy and paste but won't publish. The new editor will not accept editing or copy and paste but hey! just push the publish button and it works! Totally crazy with all the toggling back and forth between Blogger dashboards...

But the good news is that after waiting over a year for a fix on the Google Connect for those of us with blogs that carry Google ads, we no longer experience disappearing followers. I always try to put these widgets on all my blogs so other bloggers can advertise their blogs too when they become followers. That's how many of my readers found me - by seeing me listed as a follower or visitor on someone else's blog. So, please be sure to join up on the various blogs to make sure you get seen - and I have plenty of fellow bloggers as company to keep me sassy! :)

Oh, and if you are a fellow blogger, make sure you count your blog stats with your feed counts. Feedburner does a stellar job of counting your views, clicks and visits to your blogs. These views may not be physical visitors to your blog as they are viewing in a reader - so won't get counted by your blog counters. I finally got around to adding in my feed counts to the totals and was pleasantly surprised and downright shocked at all the counts I had not known were always waiting to be noticed. This week alone over 105,000 folks showed up or viewed in a reader posts on all my blogs. Thank you for such a fabulous response, especially over at Delicious social site! You are amazing! Do try to pay a physical visit to the blogs as each one is created with a specific theme, color sense and emotional or spiritual feel to benefit the reader.

It's funny how when you start a blog - The Social Poets was my first - you never realize how things are going to morph and grow. When I branched off into other blogs to park different themed posts like spiritual quotes and my spiritual thoughts about them over at Beautiful Illustrated Quotations it has been astounding the response for what I figured would be a small niche market. Well, I sure was wrong about that assumption.

When I was having fun tripping through the Creative Commons area of Flickr and put up themed posts over at my photo blog, Visual Insights, again folks flocked to grin along with me! Who knew how much fun we all could have together? Serious or funny - readers are interested in good content. Sooner or later they will find you. So, if you are like I was 18 months ago, thrilled just to have 20 people a month show up at my first blog but wondering how anyone would find out about what my blog was offering, don't despair. Bookmark your posts and your readers will begin to find you through the search engines and social sites. It just takes time.

Play Fun With Your Food: Mini Frittata Crostinis, Mini Wonton Quiches

From Denny: Do you like to play with your food? Do you like to take simple everyday items like eggs, toast and wonton wrappers and create something fun and exciting? Do you want the recipes to be quick and easy?

These two recipes are sheer delight from over at the Incredible Egg . If you have ever walked the streets of European cities, you will remember those wonderful small open-faced sandwiches which are satisfying savory snacks while you are seeing the sites. Like in Vienna, Austria, you can walk the main streets between tourist sites and pop into one of those little shops that offer snacks and coffee and pastries, tanking up to fortify yourself for more enjoyable hours of walking tours and shopping. The locals eat a couple of hours before lunch with a snack like this and the same in the afternoon and late at night. These guys eat all the time!

For those who do not know a frittata is an Italian omelet. A crostini is simply translated into "little toast." This crostini recipe is basically a little veggie and cheese omelet perched decoratively on a little toast, appetizer style. To hold the omelet on the toast there is a small bed of "food glue" in the form of a chive and onion cream cheese, bursting with flavor.

You can always add to your omelet anything you enjoy like chopped zucchini, bell pepper and red onion. If you don't have the time to make the cream cheese mixture just use some spreadable cream cheese on hand and add some dried chives and favorite seasoning like Beau Monde.






Mini Frittata Crostini

From: Incredible Egg

Serves: About 2 to 3 dozen crostini

Crostini:

36 thin baguette slices (about 1/4-inch thick)
3 tbls. olive oil
3/4 cup chive and onion spreadable cream cheese

Frittata:

6 eggs
1/2 cup milk
1/ tsp. salt
1/8 tsp. pepper
1 cup shredded cheddar cheese (4 ozs.)
3/4 cup finely chopped zucchini (I grated it on a cheese grater)
1/2 cup finely chopped red bell pepper
2 tbls. finely chopped red onion

Directions:

1. To make the crostini: Heat oven to 375 degrees. Brush both sides of bread slices lightly with olive oil, place in single layer on baking sheets. Bake in 375-degree oven until lightly toasted, about 10 minutes; cool on wire racks.

2. To make the frittata: Reduce oven setting to 350 degrees. Coat 36 minimuffin cups with cooking spray.

3. Beat eggs, milk, salt and pepper in medium bowl until blended. Add cheese, zucchini, bell pepper and onion; mix well. Spoon about 1 tablespoon egg mixture into each muffin cup.

4. Bake in 350-degree oven until just set, 10-13 minutes. Cool on wire rack 5 minutes; remove from cups.

5. To serve: Spread about 1 teaspoonful cream cheese on each crostini, top with frittata.

*** Make ahead: Crostini can be toasted the day before; cool completely and store in airtight container.

*** Lighter option: Recipe can be made with reduced-fat cheese if desired.

Mini Wonton Quiches

From: Incredible Egg

Prep Time: 20 minutes
Cook Time: 12 to 15 minutes
Makes: 2 dozen

Ingredients:

24 wonton wrappers (3-1/4 x 3-inch)
4 EGGS
1 Tbsp. all-purpose flour
3 Tbsp. finely chopped ham (1 oz.)
2 Tbsp. finely chopped green onion
2 Tbsp. finely chopped red bell pepper

Directions:

HEAT oven to 350°F. COAT 24 mini muffin cups (1-3/4 x 3/4-inch) with cooking spray. Gently PRESS 1 wonton wrapper into each cup, allowing ends to extend above edges of cup.

BEAT eggs and flour in medium bowl until blended. ADD ham, green onion and bell pepper; mix. SPOON about 1/2 Tbsp. egg mixture into each wonton-lined muffin cup.
BAKE in center of 350°F oven until filling is set, 12 to 15 minutes.

Serve with sweet and sour sauce and hot mustard.

Kid Chefs Offer Tasty Recipes 4 Sandwiches Adults Will Like

From Denny: This is a fun video of kid chefs in competition for the best peanut butter recipe. Let me tell you this video clip is worth watching as they are quite creative and these recipes adults will enjoy too. They use peanut butter much like Mexican recipes use cheese, as a binder in a quesadilla, pita bread, lettuce wrap or grilled sandwich. Several of these recipes are tasty ideas to use for leftover chicken breast and bits of fresh fruit. Take a look:

Peanutty Cristo breakfast sandwich

From: Maria Marsian Boucher, E. Longmeadow, Mass.

INGREDIENTS

• 2 tablespoons creamy peanut butter
• 1 tablespoon reduced fat cream cheese
• 2 teaspoons preserves
• 1/2 small to medium Macintosh apple, core removed and sliced into 6 slices
• 2 slices whole wheat bread
• 1/4 cup skim milk
• 1/4 cup egg substitute
• 1/8 teaspoon vanilla extract
• 1 teaspoon sugar
• 1/2 tablespoon butter
• 1/4 cup maple syrup
• Sprinkle of confectioners

DIRECTIONS

Take 1 tablespoon peanut butter and spread on one slice of whole wheat bread. Then spread 2 teaspoons of preserves on top of the peanut butter. Take the other slice of whole wheat bread and spread the second tablespoon of peanut butter on it. Spread 1 tablespoon reduced fat cream cheese on top of the peanut butter. Place the 6 apple slices in a single layer on top of the cream cheese. Place the first slice of bread on top of the slice with the apples.

Mix the skim milk, egg substitute, vanilla and sugar in a shallow bowl. On medium heat melt butter in a small fry pan until the pan has a coating of butter. Remove the extra butter and put aside and use if needed. Take the sandwich and carefully coat both sides of the sandwich with the egg substitute mixture by placing in a shallow bowl for a few seconds on each side. Place in the fry pan and cook until one side is lightly browned, then carefully flip the sandwich. Then cook until lightly browned. Remove from heat and cool for a few minutes before slicing into four quarters.

Place the sandwich on a plate with extra apple slices, maple syrup in a small cup for dipping, and a sprinkle of confectioners' sugar.

INGREDIENTS

• 1/2 cup chopped cooked chicken breast
• 2 tablespoons crunchy peanut butter
• 3 tablespoons chopped Fuji apple
• 2 tablespoons chopped black or red grapes
• 1 tablespoons light mayonnaise
• 2 teaspoons honey
• Iceberg lettuce

DIRECTIONS

Chop chicken meat and fruit, mix in bowl. Mix in peanut butter, mayonnaise and honey. Spoon into open lettuce leaf, roll and serve.





More Rockin' Moroccan Peanutty Pitas

From: West Mylroie, Santa Clara, Utah

Serves: 4

INGREDIENTS

• 1 teaspoon smoked paprika, plus more for garnish
• 1 cup prepared hummus
• 1/2 cup Jif Creamy Peanut Butter
• 1 tablespoon lemon juice
• 1/2 cup chopped green onion
• 1 1/2 cups shredded cooked chicken
• 1 large tomato, seeded and diced
• 2 tablespoons chopped cilantro
• 2 large pita pockets

DIRECTIONS

In a small bowl, combine paprika, hummus, peanut butter and lemon juice. Transfer half of peanut butter mixture to medium bowl and combine with green onion, chicken, tomato and cilantro. Fill pitas with chicken mixture.

Cut into 8 triangles and serve with remaining peanut hummus. Garnish sandwiches and hummus with a sprinkle of smoked paprika, if desired.





Peanut butter and banana quesadilla with fresh fruit salsa and vanilla yogurt

From: Lauren Wright, Waukesha, Wis.

INGREDIENTS

• 1/4 cup creamy peanut butter
• 2 large flour burrito size tortilla
• 1 banana
• 1 kiwi
• 1 golden delicious apple
• 5 large strawberries
• 18 raspberries
• 1 teaspoon strawberry preserves
• 6 oz. low fat vanilla yogurt

DIRECTIONS

Note:
Fruit salsa and yogurt should be prepared just before preparing quesadilla.

Directions for quesadilla: Take 1 large flour tortilla and add 1/4 cup creamy peanut butter to the center of the tortilla and then spread the peanut butter out evenly, leaving about 1 inch of tortilla around the entire outside of the tortilla. Next take the banana and slice thin slices (making circular pieces). Place bananas evenly on top of peanut butter. Place last flour tortilla on top then place quesadilla in pre-heated quesadilla maker for 5-7 minutes or in 10-inch non-stick frying pan for 5-7 minutes, turning once. Cut into 6 triangular pieces and serve with vanilla yogurt and fruit salsa.

Directions for fruit salsa: Take the skin off 1 kiwi and then finely chop kiwi, then put into a small mixing bowl. Take half of the apple, less seeds and core, finely chop and add to small mixing bowl. Cut stem tops off strawberries, then finely chop raspberries and add to small mixing bowl. Then stir in 1 teaspoon strawberry preserves then place part of the fruit salsa into a small serving dish.

Directions for vanilla yogurt: Open the 6 oz. container of low fat vanilla yogurt and pour into a small serving dish.





Chickenchita

From: Stephanie Hosko, Plymouth, Mich.

INGREDIENTS

• 2 tablespoons creamy peanut butter
• 1 small can crushed pineapple in juice
• 2 teaspoons of soy sauce
• 3 tablespoons olive oil
• 1 large flour tortilla
• 1 chicken breast
• 1/2 cup red pepper strips
• 2 large lettuce leaves (such as romaine)
• 2 rosemary sprigs
• Parsley or chives for garnish (optional)
• Salt and pepper

DIRECTIONS

Mix together peanut butter, 2 tablespoons of the pineapple juice and 2 teaspoons soy sauce. Set aside. Rub the chicken breast with 1 tablespoon of the olive oil, and season with the rosemary, salt and pepper. Heat another tablespoon of the olive oil in a large frying pan, and grill the chicken until cooked through, then set aside.

Next, add the red pepper strips and sauté until soft. Spread the peanut butter mixture onto the tortilla, leaving about a half inch border. Cut the chicken into small, bite-sized pieces. Layer the diced chicken, red pepper strips, 2 tablespoons crushed pineapple and the 2 lettuce leaves on top of the tortilla.

Roll the tortilla up envelope-style, and tuck in the sides. Heat the last tablespoon of olive oil on a grill pan, over medium heat. Slowly grill the tortilla, turning once, until crisp. Garnish with a dollop of peanut butter, and a sprig of parsley or a few chives.

Moistest Low Cal Chocolate Cake, Pesto Veggie Lasagna, Quick Salad

From Denny: If you have been following this blog, by now you know I enjoy those fast and funny food videos along with some great recipes. The latest cookbook promotion is from a hit reality series star, Bethanny Frankel. Her new book is "The Skinnygirl Dish: Easy Recipes for Your Naturally Thin Life."

She's a big hit in "Real Housewives of New York." She's also a total foodie, loves chocolate, came up with some clever recipes and she's pregnant. The woman has this food craving thing down pat and came up with some smart and healthy tweaks so she can enjoy her favorite foods like lasagna and chocolate cake. Bethanny is a big fan of cutting the calories but not the taste. That's why she refuses to use no-fat products. Apparently, she and I agree on one thing about no-fat foods: "They taste like glue and you end up over-eating on something else to compensate." Your body needs some fat in the diet to be healthy.

CBS The Early Show runs this regular segment of "Chef on a Shoestring" where the challenge is to construct a three course meal for four people and keep it under $40. These challenges really sharpen your skills to think differently and try new things. Take a look:

In case anyone is unfamiliar with some of the ingredients and would like to learn more, here are some facts on what to look for when you are purchasing. Excerpted from Food Lover's Companion:


Arugula: Also known as Italian cress, rocket, rugula and rucola, arugula is a bitterish, aromatic salad green with a peppery mustard flavor. Though it has long been extremely popular with Italians, American palates often find its flavor too assertive. Arugula (which resembles radish leaves) can be found in specialty produce markets and in most supermarkets. It's sold in small bunches with roots attached. The leaves should be bright green and fresh looking. Arugula is very perishable and should be tightly wrapped in a plastic bag and refrigerated for no more than 2 days. Its leaves hold a tremendous amount of grit and must be thoroughly washed just before serving. Arugula makes a lively addition to salads, soups and sautéed vegetable dishes. It's a rich source of iron as well as vitamins A & C.


Pesto: Italian for "pounded," pesto is an uncooked sauce made with fresh basil, garlic, pine nuts, parmesan or pecorino cheese and olive oil. The ingredients can either be crushed with mortar and pestle or finely chopped with a food processor. This classic, fresh-tasting sauce originated in Genoa, Italy, and although used on a variety of dishes, it is a favorite with pasta. Now there are "pestos" made from a myriad of other ingredients from cilantro to mint.


Lasagna: A wide, flat noodle, sometimes with ruffled edges. Lasagna is a dish made by layering boiled lasagna noodles with various cheeses (usually including mozzarella) with the cook's choice of sauce, the most common being tomato, meat of béchamel. This dish is then baked until bubbly and golden brown.


Oat Flour: Made from grouts that have been ground into powder. It contains no gluten, however, so - for baked goods that need to rise, like yeast breads - must be combined with a flour that does.





RECIPES


Arugula Salad with Simple Dressing

Bethenny: I think this easy, colorful salad is the world's perfect dish. Because the arugula is so flavorful, it only needs a simple dressing. I love arugula, but use any leafy green you love. Always lightly salt your salad greens.

Serves: 2 as an entrée, 4 as a side salad

INGREDIENTS:

6 cups arugula (I like baby arugula for this salad)
1 ear raw corn kernels (yes, raw-you will become addicted to the sweet flavor)
1 avocado, halved, pitted, scored into cubes, and removed with a spoon
2/3 cup pear tomatoes cut in half (or use cherry or grape tomatoes)
Salt and pepper to taste
Fresh basil cut in thin strips, for garnish

DIRECTIONS:

Arrange the arugula on a platter. Sprinkle the corn on top, then arrange the avocado pieces and tomatoes over the corn. Season with salt and pepper and drizzle the Simple Dressing (see following recipe) over the salad. Garnish with basil.






Simple Dressing

Bethenny: This recipe looks too simple, but trust this dressing. Some of the best things are amazingly simple. The first time I dressed a salad with lemon juice, olive oil, salt, and pepper, it was a revelation.

INGREDIENTS:

Juice from 1 small lemon
2 tablespoons extra-virgin olive oil
Salt and pepper to taste

DIRECTIONS:

Whisk all of the ingredients together in a bowl and taste. If the dressing is too puckery for you, add a drizzle of honey.






Pesto Vegetarian Lasagna

Serves: 4

INGREDIENTS:

8 ounces whole-wheat lasagna noodles
1/3 cup packaged pesto
15 ounces part-skim ricotta cheese
4 ounces shredded part-skim mozzarella cheese
1/3 cup chopped fresh basil
¼ cup toasted pine nuts (toast gently in a dry skillet until golden)

DIRECTIONS:

1. Preheat the oven to 350°F. Cook the lasagna noodles according to the package directions (or use no-boil noodles). Set aside.

2. In a bowl combine the ricotta, basil, and pine nuts. Set aside.

3. Spray an 11 1/2 X 3 7-inch baking pan with cooking spray (or any other pan that fits the lasagna noodles you have- this was the size that my recipe tester used). Spread one-third of the pesto in the bottom of the pan. Cover with half the noodles.

Spread half the herb-ricotta mixture over the noodles. Repeat with another one-third of the pesto, the remaining noodles, the remaining herb-ricotta mixture, then cover the whole thing with the remaining pesto. Sprinkle the mozzarella over the top.

4. Bake for 30 minutes, or until heated through and bubbling. Let sit for about 15 minutes before cutting and serving.






How-Is-This-So-Moist Chocolate Cake with Peanut Butter Glaze

Bethenny: When I first made this recipe, my fiancé and I stared at each other for days afterward, marveling at how moist and delicious this cake was. We couldn't believe it. I even accused him of dumping a stick of butter into the batter when I was in the bathroom. I kept looking at the recipe trying to figure out what made it so moist. It really is the dessert mystery of all time, as far as I'm concerned.

This recipe is wheat-free, vegan, and easy. I make this cake in a loaf pan so that each slice has just a little bit of the delicious peanut butter glaze, but you could also make it in a round or square cake pan or a release pan, or you could make cupcakes. Just be sure to use plenty of cooking spray and parchment paper. Make this recipe for any special occasion or just because you want chocolate cake.

INGREDIENTS:

1 1/4 cups oat flour
1/2 teaspoon salt
1 cup raw sugar
1 cup warm water
1/3 cup unsweetened cocoa powder (the darker and higher quality, the better)
1 teaspoon real vanilla extract
2 tablespoons vegetable oil
1 teaspoon apple cider vinegar
1 teaspoon baking soda

DIRECTIONS:

1. Preheat the oven to 350°F. Put all of the ingredients in a bowl and stir until combined.

2. Pour the batter into a loaf pan coated with cooking spray. Bake 40 to 50 minutes, rotating the pan about halfway through the baking time. When a toothpick inserted into the middle comes out clean, it's done. However, I like my cake a little bit underdone and gooey. If some moist crumbs cling to your toothpick, you can consider that done.

3. Let the cake cool completely, and then top with Peanut Butter Glaze (recipe follows). Slice and serve.







Peanut Butter Glaze

INGREDIENTS:

1/2 cup raw sugar
2 tablespoons unsweetened cocoa powder
2 tablespoons canola oil
2 teaspoons real vanilla extract
2 tablespoons soy milk
2 tablespoons creamy 100% peanut butter (the natural kind, no added sugar)

DIRECTIONS:

Combine all of the ingredients in a bowl and mix with a hand blender until the sugar crystals are dissolved. If they aren't dissolving, you can gently heat the mixture until they do (heat on low on the stove or on 50 percent power in the microwave, stirring every 20 seconds). Spread the glaze on the cake.

From Denny: Remember me? You know, the woman who was pining away, waiting for Winter to leave and Spring to come? Yeah, well, the past two weeks here in south Louisiana the tree pollen blast has forced me to practically buy stock in the Kleenex brand of nose tissues. :) With all the fun Spring has sprung on my immune system I had to dial it back and was not able to write as many posts. You know that amusing but true proverbial saying of "Politics is so ugly; it's like making sausage"? Writing this past week has not been much prettier. Lucky you that you don't have blogger video cam! :)

I started keeping up with the news headlines over at Dennys Global Politics, partly to go back and write an opinion piece, partly just to see what's out there across the media spectrum. There are mainstream stories along with the obscure you might not have noticed. The stories are excerpted yet provided with links so you can read in more detail if you prefer.
