Recipe: Super Easy Key Lime Cake Goes Well With Seafood

From Denny: Since we love seafood so much in the South, well, you need something citrusy to chase the garlic taste. Another food popular in Louisiana is cream cheese icing and this cake has a cream-cheese key lime icing. Key limes from Florida are awesome! This simple recipe is just the ticket, enjoy!

Ingredients:
1 (18.25 ounce) package lemon cake mix
1 1/3 cups vegetable oil (I like canola as it is a neutral oil that doesn't influence other flavors)
4 eggs
3/4 cup orange juice
1 (3 ounce) package lime Jell-O
1 (1 pound) package plus 1 cup powdered sugar
1/2 cup butter or margarine
8 ounces cream cheese
3 Tablespoons lime juice
Directions:
1. In a large mixing bowl, combine cake mix, vegetable oil, eggs, orange juice and lime Jell-O. Pour into 3 greased and floured (8-inch) cake pans.
2. Bake in preheated 350 degrees F. oven for 25 minutes or until a toothpick inserted in center comes out clean.
3. Let cool 10 minutes, then remove from pans. Let cool completely.
4. To make icing, combine powderedsugar, butter, cream cheese and key lime juice.
5. Ice between layers and on top and sides of cake. Enjoy!

Recipe: Ricotta Pudding with Chocolate
From Denny: Let's see, this is the best of both worlds! It has protein AND chocolate! Found this over at NBC. They just recently updated some chocolate recipes - finally! Too bad they didn't put a photo of this recipe. Guess I'll have to just salivate in my mind...
"Ricotta pudding with chocolate, orange zest and pistachios
Don’t have much time to cook a fancy meal? Try these easy, tasty options."
From: Fresco by Scotto Restaurant
Makes 4 to 6 servings
INGREDIENTS
1 1/4 cups heavy cream
1/2 cup powdered sugar
1 cup ricotta cheese
1/4 cup whole pistachios, chopped
1/4 cup chocolate, grated
Zest from 1 orange
2 teaspoons pure vanilla
1 teaspoon ground cinnamon
DIRECTIONS
1. Whip the heavy cream with the powdered sugar till firm and fluffy; do not overwhip.
2. Then, whip the ricotta separately for a few minutes.
3. Fold the heavy cream into the whipped ricotta and fold in the vanilla extract, chocolate, orange zest, and cinnamon.
4. Place in parfait or wine glasses and refrigerate.

Recipe: Low-Fat Lemon Bundt Cake
From Denny: Looks like I will be exploring and downright plundering this wonderful recipe database over at PastryWiz.com! Wonderful array of recipes over here at this extensive database.
Repeat after me: Louisiana LOVES lemon! Louisiana people LOVE lemon recipes! We even planted a lemon tree in our back yard a couple of years ago. Of course, we named "him": Lemoncello (how original)
This lower fat version of a Lemon Bundt Cake sounded really good. OK, I'll probably not go for the margarine which I find a revolting taste but at least those with special diets who adjusted their tastebuds could enjoy this recipe. I'll just use clarified butter (or ghee when I can find it on the grocery shelves).
Cooking spray: substitute your own like placing canola oil in a spray bottle to get the same "less is more" effect. Canola oil is a thinner oil than most and can be sprayed.
By using egg whites they eliminate the extra fat and calories, same with using skim milk over low fat or whole milk.
And icing, well, I'd probably use half to none at all as I've never been a huge fan of sugar icing (now chocolate ganache is another matter...).
Better yet I would prefer to serve the icing as a puddle on the side of the sliced cake so you could dip a piece of cake in it or take your fork and lightly drizzle the icing over your slice of cake.
Louisiana people LOVE their sugar icings and call them "Cream Cakes" when used like the one below.

Low Fat Lemon Bundt Cake

Yield: Serves 14
Ingredients for the Cake:
Butter flavored cooking spray
8 oz. plain nonfat yogurt
1/2 cup light corn syrup
3 cups sugar
1 tsp. vanilla extract
8 egg whites
2 Tbs. fresh lemon juice
rind from 1/2 lemon, grated
3 cups flour
1/3 cup powdered sugar
1/2 tsp. baking powder
1 tsp. salt
Ingredients for the Icing:
1 Tbs. fat-free margarine
2 Tbs. fresh lemon juice
rind from 1/2 lemon, grated
1/2 tsp. vanilla extract
1/8 tsp. salt
2 cups powdered sugar
1 Tbs. skim milk
Directions: Preheat oven to 300 degrees F. Spray a bundt pan with cooking spray.
In a large bowl, combine yogurt, corn syrup, sugar, vanilla, egg whites, lemon juice, and lemon rind and mix well. In a medium bowl, combine flour, powdered sugar, baking powder, and salt. Mix well.
Add a the dry mixture to the wet mixture and mix well. Pour batter into pan. Bake for about 1 hour and 20 minutes.
Let cake cool for about 10 minutes before removing from pan. Remove cake from pan and cool in the refrigerator for about 15 minutes before icing.
Combine icing ingredients and mix well. Pour or spread icing over cake until it's completely covered. Cool completely before serving.

Recipe: Chocolate Sin Cake

Ingredients:
2 lbs chocolate chips
1 1/3 lb butter
2 cups sugar
2/3 cup water
16 eggs
Directions: Heat chocolate and butter (chunks) in double boiler. Combine sugar and water in a sauté pan and simmer until dissolved, combine with chocolate mixture. Blend until smooth, then remove from heat. Whisk eggs lightly, avoiding excessive air. Gently combine egg and chocolate mixtures.
Using 2 loaf pans lined with parchment, pour cake mix about 1 ½ inch thick. Place pans into a large roasting pan. Place in oven and fill the pan with water being careful not to float the cake pans. Bake at 300 degrees for 2 hours. Remove and let cool.
Refrigerate to remove from parchment, slice prior to service.
At Café Sbisa, we whip 1 teaspoon finely ground espresso with heavy cream and powdered sugar and top the cake. Add berries and a mint sprig for garnish.

Recipe - Oven Pancake
Dennys Louisiana Lyon Oven Pancake - Vegetarian! Great for a quick supper or brunch with a minimum of fuss mixed in one bowl and baked in one pan - and this pancake is long on presentation! This is a version of the Dutch baby oven pancake. The only sugar in the recipe is if you serve it with powdered sugar. High in protein and very filling, it is about 400 calories if served to only two people - so no need to add sausage or bacon.
Summary:
heat your pan in the oven before you begin mixing,
melt the butter in the pan until bubbling,
pour in the batter and
let the beauty rise to the occasion in the oven,
bake about 20 - 25 minutes.
serve with lemon wedges and powdered sugar.
