Recipe: Paula Deens Chocolate Chip Cake

From Denny: I just love it when celebrity chefs come on TV morning shows to hawk their latest cookbook and give out some interesting yummy recipes! Here's the latest from chef Paula Deen from her down home Southern style of good food. She appeared on NBC's The Today Show this month. This recipe is an easy one made with a yellow cake mix.

From: "Paula Deen's Cookbook for the Lunch-Box Set"

INGREDIENTS

• Cooking spray
• Flour for dusting pan
• One 18 1/4 ounce yellow cake mix
• 1 cup sour cream
• 4 eggs
• 1/2 cup vegetable oil
• One 3 ounce package instant pudding mix
• One 12 ounce package semisweet chocolate chips
• Confectioners' sugar for dusting top of cake

DIRECTIONS

Preheat the oven to 350 degrees. Spray a bundt pan with cooking spray then put about 2 tablespoons of flour in the bottom of the pan. Tap the pan and turn it all around until the flour coats all surface of the pan. Dump out any excess flour into the trash can.

In a large bowl, combine the cake mix, sour cream, eggs, oil and pudding mix. Combine with an electric mixer until very smooth. Stir in the chocolate chips.

Place the batter evenly in the bundt pan and smooth the top. Bake for 45 to 50 minutes until the top appears set and the cake begins to pull away from the sides of the pan. Have an adult help you remove the pan from the oven.

Allow the cake to cool in the pan for about 15 minutes, then take a butter knife and run it around the sides of the pan. Invert the cake onto a wire rack to cool completely.

Dust the top by placing confectioners' sugar into a strainer, holding it above the cake, and tapping the sides of the strainer. Move the strainer from place to place until the cake is dusted.

Recipe: Famous Chefs Secret Chocolate Chip Cookies

From Denny: When these pastry chefs come out with a new line of something, dark chocolate chips in this case, why don't they ever post a photo of the finished product on the TV show where they are doing the promotion or the network leave a video showing the process...? Oh, well, today we have to just enjoy this fun poster; it did make me grin. :)

It's interesting this chef uses both pastry and bread flour to make our traditional cookie recipe we love so much! Of course, if you don't want to make giant cookies, this recipe will probably yield a gazillion of them! More to share with friends! :)

Yield: 26 giant cookies

INGREDIENTS

• 1 pound butter
• 13 ounces sugar
• 1 pound light brown sugar
• 4 eggs
• 14 ounces King Arthur pastry flour
• 14 ounces King Arthur bread flour
• 1/2 ounce salt
• Less than 1/2 ounce baking powder
• Less than 1/2 ounce baking soda
• 1 tablespoon vanilla extract
• 2 pounds Jacques Torres 60% cocoa content dark chocolate, cut in small pieces

DIRECTIONS

Preheat convection oven to 325 degrees. Using a stand mixer fitted with paddle, cream together the butter, sugar and brown sugar until it reaches a light and creamy texture. Add the eggs, one at a time. When mixed, turn the mixer to slow speed and add the rest of the ingredients. When the mixture is thoroughly combined, bake on a parchment paper-lined sheet pan for about 14 minutes (light brown, a little underbaked).

TIPS

Jacques does not use cups and teaspoons so he suggests starting with the weights if you need to convert the recipe. His secret is in the butter, flour and chocolate ingredients.

Recipe: You Can Have Your Chocolate Mousse AND a Flat Belly Too!

From Denny: Hurricane Bill has been busy in the Atlantic Ocean bringing a deluge of rain to Louisiana this afternoon, delaying my posting. With that much lightning I turn off the computer and wait... and wait... :)

While searching for a great or unusual chocolate recipe I ran across this one from the morning show from NBC called The Today Show. There's a new cookbook out to help you keep or re-acquire, whichever the case may be, that flat belly. But what to do? Give up our beloved chocolate? I don't think so say millions of women worldwide! :)

I once had a really good tofu chocolate mousse as it tasted great and didn't have as much oil to make it as rich as the original recipes do. Now I've run across another version we all just have to try! Take a look as it's simple, fast and easy.

From: Flat Belly Diet Cookbook

Serves: 4

Time: 10 minutes (now that's a winner in my book!)

From the author: As a garnish, pretty chocolate curls turn a humble fruit cup into a restaurant-worthy confection. Making them is as easy as drawing a vegetable peeler along the edge of a bar of chocolate. Use the short wide edge to make small tubular curls; use the longer, narrower edge for thinner, longer shavings.

Ingredients:

• 12 ounces soft silken tofu, drained

• 2 teaspoons vanilla extract

• 1\8 teaspoon almond extract

• 1 cup semisweet chocolate chips, melted

• 1\2 cup fat-free Greek-style yogurt

Directions:

1. Place the tofu, vanilla extract, and almond extract in a food processor and blend until smooth. Add the chocolate and blend for 1 minute. Scrape the sides with a rubber spatula and blend for 1 minute longer or until incorporated. Pour into a large bowl.

2. Fold in the yogurt just until blended. Refrigerate until ready to serve.

Tips:

Note: For chocolate semifreddo, place the mixture in a 9" loaf pan lined with foil. Cover and freeze for 3 to 4 hours or until just set. Serve immediately.

Nutrition per serving: 271 calories, 11 g protein, 40 g carbohydrates, 18 g fat, 10 g saturated fat, 0 mg cholesterol, 19 mg sodium, 4 g fiber.

Recipe: Chocolate Revel Bars

From Denny: This week is dedicated to brownie recipes! Yay!

Looking through one of my "elderly" cookbook finds from a book fair I was struck by how much cooking and baking has changed in the past 30 years or so. As we learn more about nutrition the recipes change. As new products, good or bad for us, come onto the market, the recipes of that time period reflect it. Usually, I look for timeless recipes where the ingredients will be easy to acquire and simple.

During the 1960's and 1970's making "bar" cookies (a type of brownie in our minds today) was most popular mainly because it saved time from forming the cookie dough, just bake and cut into serving sizes was faster. Women were entering the work force then and needed to speed up their recipes as they only had so much time in a day. (Sound familiar?)

I chose this recipe for today as I'm always thinking of how to use up something out of the pantry, like sweetened condensed milk, that I bought for last Thanksgiving holiday and never got around to using it for anything. Do you suffer from those pantry extras too? Well, this recipe looked like a tasty idea to meet my needs. It might even end up on this Thanksgiving's table! :)

Note: You can substitute half of the butter here for canola oil. If you make it all canola oil it will lose that buttery flavor. Well, at least the oats are a healthy addition! :)

There wasn't a good enough photo provided for this recipe - that's the only thing about older cookbooks, it was before quality digital photography that gives clear photos. Just imagine a triple layer brownie with the oatmeal crust, a layer of dark chocolate goodness and then dots of oatmeal crust on the top, almost like a miniature chocolate pie idea cut into bars!

Chocolate Revel Bars

From: Better Homes and Gardens All-Time Favorite Cake & Cookie Recipes, published 1980

Yield: 48 (2-inch) squares

Ingredients:

3 cups quick-cooking rolled oats

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1 cup unsalted butter (can substitute margarine)

2 cups packed brown sugar

2 eggs

2 teaspoons vanilla

1 1/2 cups semi-sweet chocolate chips

1 (14 ounce) can (1 1/4 cups) sweetened condensed milk

2 Tablespoons butter (can substitute margarine)

1/2 cup chopped walnuts or pecans

2 teaspoons vanilla


Directions:

Stir together oats, flour, baking soda, and 1 teaspoon salt. In mixer bowl beat 1 cup butter or margarine on medium speed of electric mixer for 30 seconds.

Add brown sugar and beat till fluffy. Add eggs and 2 teaspoons vanilla; beat well. Add dry ingredients to to beaten mixture and beat till well blended.

In heavy saucepan heat together chocolate pieces, sweetened condensed milk, 2 Tablespoon butter or margarine and 1/2 teaspoon salt over low heat, stirring till smooth. Remove from heat. Stir in nuts and 2 more teaspoons vanilla.

Pat 2/3 of the oat mixture into bottom of an ungreased 15"x10"x1" baking pan, saving enough to spread on top too. Spread with chocolate mixture. Dot with remaining oat mixture.

Bake in 350 degree F. oven for 25 to 30 minutes or till done when toothpick inserted in center comes out clean, no dough sticking to it. Cool on wire rack. Cut into bars.

Recipe: Easy Cheap Chocolate Walnut Mock Apple Pie

From Denny: Looked like it was going to rain this morning so I had to stop my posting and get out there and mow the lawn. Louisiana grows some beautiful thick lush lawns in this hot and humid heat! These are the kind of lawns you enjoy going barefoot on because they feel like thick deep moss. They also are wet to mow...so it took me a while to cool off and start writing again. :)

This little easy inexpensive recipe comes down to us from our grandmothers' and great-grandmothers' time during the Great Depression. Folks were looking for little luxuries they could afford and someone came up with the brilliant idea of using Ritz crackers in a recipe and found out it was so close to the real thing it was amazing! It took the nation by storm.

Over the years, people have played with this easy recipe, made it their own and developed all kinds of interesting variations. Try experimenting with your own variations. This week our local paper featured the antique recipe and it caught my interest. You knew I had to share it because it had chocolate! Yum!

The 1930's was the same time our beloved classic Chocolate Chip Cookies recipe was invented by an inn keeper too. Hard economic times seem to bring out the innovation in good cooks and bakers. Since our own economy is uncertain these days - people are looking for ways to reduce their spending - this is offered as an inexpensive alternative so you can still have fun no matter what is going on around you. Enjoy!

Chocolate Walnut Mock Apple Pie

From: Kraft Foods

Serves: 10

Ingredients:

2 cups sugar

2 teaspoons cream of tartar

1-3/4 cups water

Zest and 2 Tablespoons juice from 1 lemon

Pastry for 2-crust, 9-inch pie

36 Ritz Crackers, coarsely broken (about 1-3/4 cups)

2 Tablespoons butter or margarine, cut into small pieces

1/2 teaspoon ground cinnamon

½ cup chopped walnuts

½ cup semisweet chocolate chips or chunks


Directions:

1. Mix sugar and cream of tartar in medium saucepan. Gradually stir in water. Bring to boil on high heat; simmer on low 15 minutes. Stir in zest and juice; cool 30 minutes.

2. Heat oven to 425 degrees. Roll out half of pastry on lightly floured surface to 11-inch circle; place in 9-inch pie plate. Place cracker crumbs in crust. Place chocolate chips and walnuts over cracker crumbs. Pour sugar syrup over crumbs, chips and nuts; top with butter and cinnamon.

3. Roll out remaining pastry to 10-inch circle; place over pie. Seal and flute edge. Cut several slits in top crust to permit steam to escape. Place on parchment-covered baking sheet.

4. Bake 30-35 minutes or until golden brown. Cool.

Note: To prevent crust from browning too much, cover edge with foil near end of baking time if necessary.

Chocolate Bread Pudding With Clear Caramel Sauce

From Denny: We love bread pudding in the South! And, ever since I was eleven years old and spent the summer with my Aunt Noelle after my mother died that May right before school let out, I've had a love affair with all things chocolate. Back then, no one ever heard of chocolate bread pudding. But, my Aunt Noelle, an English teacher, was a creative woman and loved to please others so she devised a chocolate version for me - and as a diversion away from the loss of my mother. We spent the whole summer cooking and baking like it was a culinary school!

Today, trained chefs have taken over our childhood fantasies and created more sophisticated versions that are pure Heaven! Take a look at this gem I found today! I could pass on the caramel sauce and enjoy with a little powdered sugar and fresh strawberries. I prefer to get down to the business of diving into pure chocolate. :)

Chocolate Bread Pudding With Clear Caramel Sauce

Q: I recently dined at SoHo in Vinings, and after dinner everyone in my party insisted that I try the chocolate bread pudding for dessert. It was divine! - Tom Reagan, Winston

A: SoHo co-owner Frank Smith wasn't surprised by the request; he says the chocolate bread pudding has been the restaurant's top-selling dessert for nine years. "When you see it, you think it's going to be very dense and heavy, but it's very light and airy - and people love it, " he said. "It's not your typical fudge brownie dessert."

Chocolate Bread Pudding With Clear Caramel Sauce

Hands on time: 20 minutes
Total time: 45 minutes
Serves: 8

Ingredients:

1 quart heavy whipping cream

1 pound (about 7 slices) fresh bread crumbs

11 ounces bittersweet chocolate, finely chopped

8 egg yolks

1/2 cup granulated sugar

2 teaspoons vanilla extract

Clear Caramel Sauce (see recipe below)

Clear Caramel Sauce:

Yield: 1 cup

Hands on: 5 minutes
Total time: 15 minutes

Directions: Although the sauce will nearly solidify as it cools, it melts quickly in the microwave.

Ingredients:

1 1/3 cups granulated sugar

1 cup water, divided

Directions:

For Pudding:

Preheat oven to 325 degrees. Bring a tea kettle of water to a simmer. In a saucepan, heat the cream over medium heat until it comes to a boil. Meanwhile, place the bread crumbs and chocolate in a large mixing bowl and set aside. Lightly coat an 8-by-12-inch or 9-by-13-inch pan with butter; set aside.

In a separate mixing bowl, beat the egg yolks with the sugar. Whisk in a small amount of the heated cream, then whisk the egg yolk mixture into the hot cream. Remove the saucepan from the heat; whisk in the vanilla extract. Pour the cream mixture over the bread crumbs and chocolate and stir until the chocolate is melted.

Transfer to the prepared pan. Place the pan in a larger baking dish and pour the simmering water into the outer pan, about 1 inch up the sides. Bake the bread pudding in its water bath for 30 to 40 minutes, until set in the center. Serve warm with vanilla ice cream and warm caramel sauce. (Note: Bread pudding can be prepared ahead and stored in the refrigerator. Reheat in a 325 degree oven or in the microwave.)

For Clear Caramel Sauce:

Combine sugar and 1/2 cup water in a heavy saucepan. Cook over high heat, swirling occasionally to dissolve sugar, and bring to a boil. Boil until the liquid turns caramel in color, 5 to 10 minutes. Carefully add remaining 1/2 cup water and swirl to dissolve. Transfer mixture to heat-resistant glass or ceramic bowl. Cool slightly before serving, or cool to room temperature and then reheat a few seconds in microwave before serving.

Per serving: 129 calories (percent of calories from fat, 0), no protein, 33 grams carbohydrates, no fiber, no fat, no cholesterol, 1 milligram sodium.

Notes:

Any recipe that starts with a quart of heavy cream has just got to be good. And this one just keeps getting better, with bittersweet chocolate and an easy-to-make caramel sauce.

Tester's note: Quality bittersweet chocolate can be expensive and a bit hard to find. A reasonable substitute is to use 1 (12-ounce) bag of miniature semisweet chocolate chips, minus 1/4 cup. Because semisweet chocolate is sweeter than bittersweet, reduce the granulated sugar from 1/2 cup to 1/3 cup.

Per serving:
876 calories (percent of calories from fat, 70), 14 grams protein, 56 grams carbohydrates, 7 grams fiber, 73 grams fat (42 grams saturated), 376 milligrams cholesterol, 363 milligrams sodium.

Recipe: Chocolate and Pistachio Surprise Cake



From Denny: If you haven't heard of the fabulous blog Chocolate and Zucchini, written both in English and French, then, "Honey, you ain't living!" :) Seriously though, this wonderful site has been around a few years on the web (since 2003) and is written in a friendly manner, stuffed full to the rafters with awesome recipes! The writer is a Parisian woman by the name of Clotilde Dusoulier who started this blog to share her passion for all things food-related. Over time her passion for food writing made it possible to quit her day job and write full time!

While I'm putting up her recipe here, you really do need to go read what all she wrote before giving you the recipe. She's a wonderful and chatty writer, brimming over with information and good times. Take a little extra time and check out the rest of her site. She gives her recipes in both metric and American measurements.

Here is a small excerpt of her humorous writing: "To me, cakes pretty much fall under two categories, chocolate and non-chocolate, so I asked the birthday-girl-to-be (her sister) which kind she wanted. Her reply was that she simply wanted a surprise cake, so I followed my deeper instincts and went, well, the chocolate route."

Now does this sound like a woman after our own chocolate hearts or what?!! :) She also suggests you bake this cake a day ahead as she believes that dark chocolate cakes taste better on the second day, talk about making our life easier!

Chocolate and Pistachio Surprise Cake

Ingredients:

- 270 g (2 C) flour

- 2 tsp baking powder (1 envelope)

- 1 tsp baking soda

- 150 g (2/3 C) butter, at room temperature

- 300 g (1 1/4 C) white sugar

- 4 eggs

- 1 1/2 C (3 x 125 ml) plain yogurt or sour cream

- 1 1/2 tsp vanilla extract

- 2 Tbsp unsweetened cocoa powder

- 60 g (1/3 C) chocolate chips

- 2 Tbsp pistachio paste

- 60 g (1/3 C) shelled pistachios, chopped


Ganache:

- 120 g (3 oz) baking dark chocolate

- 125 ml (1/2 C) whipping cream


Directions:

Preheat your oven to 180°C (360°F). (350 degrees will do if your oven is not this exact.) Grease a 25-cm (10-inch) cake pan, preferably nonstick with a removable bottom.

Prepare the chocolate batter. In a food processor, mix together half of the sugar and half of the butter until fluffy. Add in two of the eggs, one at a time, mixing between each. Add in half of the yogurts and all the vanilla extract, mix again. In a medium bowl, combine half of the flour with half of the baking powder, half of the baking soda and all of the cocoa mixture. Add the flour mixture into the food processor and mix again until just combined. Pour the batter into the cake pan, and reserve in the refrigerator.

Rinse the bowl of the food processor, and prepare the pistachio batter: mix together the rest of the sugar, the rest of the butter and the pistachio paste. Add in the two last eggs, one at a time, mixing between each. Add in the rest of the yogurts and mix again. In a medium bowl, combine the rest of the flour with the rest of the baking powder and baking soda, and all of the chopped pistachios. Add into the food processor and mix again until just combined.

Take the cake pan out of the fridge, and sprinkle the chocolate chips evenly over the surface of the chocolate batter. Gently pour the pistachio batter on top, and smooth out the surface with a spatula. Put into the oven to bake for about an hour or until a cake tester comes out clean. Let rest for five minutes on the counter, then turn out on a rack to cool completely.

Prepare the ganache. Melt the dark chocolate with the whipping cream in a double boiler (or in a bowl set over a saucepan of simmering water), stirring with a spoon regularly until completely melted and velvety. Let the ganache rest until it has thickened a bit, about 30 minutes, and frost the cake using a small spoon.

You can either wait until the ganache has cooled and set before serving, or frost the cake just before you serve it, but the cake itself needs to have cooled down completely, it tastes better that way.

Recipe: Heavenly Pie

"Heavenly Pie Recipe Adapted from Country Wisdom and Know-How. Instead of running this recipe verbatim (like I normally might), I've tweaked a few of the ingredients, added some notes. Serve this pie well-chilled."

2 cups well-crushed graham crackers

1/3 cup melted butter

2 tablespoons honey

8 ounces cream cheese, softened

8 ounces organic silken tofu

1 large egg

6 ounces carob or chocolate chips, melted

1 teaspoon vanilla

Greek yogurt (sweetened a bit, optional for serving), in place of whipped cream

Directions:

To make the crust make combine the cracker crumbs, butter, and honey. Press into a 9-inch pie pan. I gave this mixture a whirl in the food processor to bring it all together and work out and chunks of cracker.

In a food processor, or with the mixer at medium speed, blend together the cream cheese, tofu, egg, chocolate, and vanilla. Scrape down the sides once or twice. Blend until filling is very smooth, with no visible lumps.

Spoon the filling into the pie pan and bake at 350F degrees for about 30 minutes (when I went to 35 minutes I started seeing fissures in the filling). CHILL COMPLETELY BEFORE SERVING. Serve with a dollop of sweetened yogurt or whipped cream (if desired).
Makes one pie. About 12 servings.

Recipe: Chocolate Soup



From Denny: Now this is definitely something I'd like to try - a soup made from chocolate, wow! Beware of the calorie count though; it's a real whopper! Be generous; share this dessert with friends and family! :)

A: If all you think of is minestrone when you think of Italian soup . . . think again. Zuppa di Cioccolato is a rich chocolate soup served as a dessert. Sotto Sotto chef Christian Watson says this heavenly confection is a combination of fine semi-sweet chocolate (the brand he uses is Callebaut, which can be difficult to find locally), hazelnut whipped cream topping, dry roasted hazelnuts and sugared croutons."

Hands on time: 20 minutes
Total time: 30 minutes
Serves: 10

Ingredients:

For the chocolate base:
1 1/2 quarts (6 cups) heavy cream (36 to 40 percent milkfat)

1/2 cup granulated sugar

1 1/4 pounds best-quality semi-sweet chocolate chips

6 tablespoons rum (Virgin Island Rum, a sweet rum, is suggested)

For the baguettes:

10 slices French baguette

Granulated sugar for sprinkling

For the hazelnut cream:

3/4 cup heavy cream

1/4 teaspoon hazelnut praline paste (see note)

For the garnishes:

1 cup whole roasted hazelnuts

Unsweetened cocoa powder

Instructions:

In a medium, heavy Dutch oven, combine the cream and sugar over medium-high heat. Bring to a gentle boil, reduce heat to low and gradually add the chocolate chips, whisking constantly until smooth. Stir in the rum, and whisk again. (The soup base may be adjusted to your desired consistency with additional cream or chocolate.)
Sprinkle the baguette slices with granulated sugar and place in the oven to toast until just caramelized.

In the large bowl of an electric mixer, beat the 3/4 cup cream to soft peaks with the hazelnut paste.

To serve: Place a crouton in the bottom of a shallow soup bowl; pour about 3/4 cup of the soup base over it, sprinkle with roasted hazelnuts, and top with a dollop of the whipped cream. Dust with cocoa powder, and serve at once.

NOTE: Hazelnut paste is difficult to find. Watson suggests substituting Nutella, for a slightly different flavor. Our tester reports it is fine to omit the paste.

Recipe: Chocolate Cornbread Pudding with Whiskey Sauce

It's well known often the best cooks for centuries have been the African-Americans of the American Deep South. Sadly, this wonderful tradition of soul cooking was born out of slavery. The best of those tragic times endures, coming down to us through history. What endures is their sense of innovation, trying unusual combinations and perfecting those recipes for home cooking, becoming family favorites.

Part of what Louisiana is known for is the French tradition of using up leftovers as good ingredients for the next dish. Leftover cornbread is usually just reheated or pan-fried in a little butter (clarified butter at our house for cholesterol reasons). But this is certainly a new and wonderful twist! And with chocolate! Does life get any better? :) Enjoy!

This Chocolate Cornbread Pudding is served with Whiskey Sauce.

Tip: For a healthier, and lighter pudding, use two cups of milk instead of half and half.

Ingredients:

4 beaten eggs

1 cup of brown sugar

1 cup milk

1 cup cream

1 tablespoon vanilla

6 pieces day-old cornbread cut into cubes

1 cup mini chocolate chips

Directions:

Preheat oven to 325 F.

Mix all ingredients together, but save 2/3 cup of chocolate chips. Allow mixture to sit for half an hour until the liquid has softened the cornbread. Pour into a greased baking dish. Sprinkle the remainder of the chocolate chips on top. Bake until firm. Check after about 40 minutes.

Whiskey Sauce

½ cup melted butter

1 cup sugar

1 well beaten egg

1 ½ cups heavy cream

¼ cup whisky, or more as desired

Melt butter and sugar in saucepan over low heat. Stir often. Add one beaten egg. Stir. Remove from heat and cool. Add whisky and cream. Beat until light. Chill for one hour before serving.

Serve chocolate cornbread pudding recipe soul food warm or cold, with sauce. Enjoy.

Recipe: Marcarpone Chocolate Toffee Bars

Mascarpone Chocolate Toffee Bars

Ingredients

Vegetable cooking spray

1 pound refrigerated sugar cookie dough (recommended: Pillsbury)

2 (1.4-ounces) chocolate-toffee candy bars, coarsely chopped, divided (recommended: Skor)

1/2 teaspoon pure vanilla extract

1 cup semisweet chocolate chips (recommended: Ghirardelli)

1 teaspoon vegetable oil

1 cup (8 ounces) mascarpone cheese, at room temperature

1/4 cup sliced almonds, toasted * see Cook's Note

Directions

Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.

Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to overhang the sides. Spray the parchment paper lightly with cooking spray.

In a medium bowl, combine the cookie dough, 1/2 of the chopped chocolate-toffee candy pieces and vanilla extract. Using damp fingers, gently press the dough into the prepared pan. Using the tines of a fork, prick the dough all over. Bake for 12 to 14 minutes until the crust is lightly browned. Cool for 15 minutes.

Place the chocolate chips and vegetable oil in a medium bowl. Place the bowl over a pan of simmering water and stir until the chocolate has melted. Cool the chocolate mixture for 10 minutes. Whisk in the mascarpone cheese until the mixture is smooth. Using a spatula, spread the chocolate mixture over the cooled crust. Sprinkle the remaining chocolate-toffee candy pieces and sliced almonds over the chocolate mixture. Refrigerate for at least 2 hours until the chocolate layer is firm.

Peel off the parchment paper and cut into 1 1/2 by 2-inch bars. Serve at room temperature.

*Cook's Note: To toast almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 8 to 10 minutes until lightly browned.
